You are right in asserting your doctor is not well educated in celiac disease (most aren't). You do need to have been consuming gluten solidly for at least 8 weeks prior to testing for the test to be valid. He also did not perform a total serum IGA to ensure that you are an antibody producer; some people aren't and that invalidates the test too. Your... -

Count me among those who cam handle a little raw tomato, but anything cooked (ketchup, pasta sauce, pizza sauce, sundried tomatoes, etc.) really zaps me, I came to the same conclusion Jestgar did, that the cooking alters the protein structure; also cooked tomato tends to be more concentrated, i.e., you are getting MORE tomato than if eating raw. -

You Can have B12 injections if you can't do the sublinguals (I can't), and you really need a prescription strength Vitamin D if you are deficient. Organic and gluten free products are often adjacent to each other on the shelf, but bear no relationship to each other as far as safety for celiacs. You still have to analyze every label for gluten and the rules are the same.
