Yes, I am using Bob's Red Mill and its been in my freezer since I was first diagnosed, so almost 3 years old. Does it expire? Thanks for the suggestion. My local celiac chapter does support Dr. Fine's test for people who do not show positive on regular testing but their symptoms do resolve on the gluten free diet. My 19 year old daughter who was diagnosed in August gets hives whenever she accidentally ingests gluten. Its mainly on her cheeks. She also has HD (Herpitiformis Dermatitis)type rash on her hip that is finally after almost a year clearing up. Skin rashes and Celiac (other than HD) often go together. I wouldn't worry too much over what the doctor will think. Many are starting to coming around. I would simply tell him/her that you did your own gluten challenge and found that you absolutely cannot tolerate gluten and do not want to put your body through another challenge again just for an endoscopy. Hi Jayme, your symptoms do fit with gluten intolerance as well as lactose intolerance (cheese on the pizza) and fructose malabsorption (fructans in wheat, onions, asparagus, and others) or may just have a wheat intolerance. The more ripe the banana the better. I wait for it to have light spots and can eat half of a medium banana everyday....I share with hubby. Other Fructmals say they can have them only every other day. Dried fruit will always have more fructose. Some can get away with a few dried cranberries in a salad but I usually just stay away from all dried fruit....

For the bread I have to be extremely careful with ingredients. If it contains fruit juice, applesauce, honey, inulin, agave, chickory or molasses, I can't do it. Since sugar seems to be your problem, you may want to take a look at fructose malabsorption. Just google it and you will get a ton of hits. Apple sauce and apple juice whether sweetened or not would send me over the edge. Also tomato paste would have too much fructose for me. Willabec, the thing with FM is that it is not so restrictive as Celiac. You don't have to worry about cross contamination ect. Also there are no two FM'ers that are alike. We each have our own level of intolerances to fructose and fructans (onions, asparagus, garlic, artichokes, wheat are examples). Some only have problems with fructose where others have... -

You are right it is intriguing. I also have fructose malabsorption and pectin is a big no for me. Actually anything prebiotic (oligosaccharides and Fructo-oligosaccharides)tends to set a lot of us off such as chickory root, inulin, ect. I agree that the Australian based Yahoo group is a great tool for learning about FM. I don't find my diet all that much more restrictive because for me, I am not a fruit person and fruit is my biggest culprit. No one needs high fructose corn syrup. Heinz and Hunts have just recently come out with no HFCS which is awesome! Regular old cane sugar in moderation...
