ARCHIVED Symptoms And Questions
ksymonds84 replied to endplusone's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello and Welcome. The Dermatitis herpetiformis rash can look like shingles. Is it still active? If so you can ask for a biopsy again but specify you want to look for Dermatitis herpetiformis. Also, I would have a complete Celiac panel ran. Are you still eating gluten? If not the panel may come back normal. I would do all the testing that you can... -
ARCHIVED Amazing Christmas Recipe
ksymonds84 replied to RideAllWays's topic in Gluten-Free Recipes & Cooking Tips
Sounds Yummy! Thanks for sharing! I tried a totally from scratch recipe at Thanksgiving and they turned out dry and hard. I will give yours a shot but I will need to use real butter (can't have the soy in margarine) so hopefully they will turn out as well as yours! -
ARCHIVED Wondering If I Might Have celiac disease?
ksymonds84 replied to iamblessed's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello and Welcome! I would get the celiac panel done right away, especially since your still eating gluten. Many people (myself included) start the diet before testing which will most likely cause the tests to be false. Then the only way to get properly tested again is to do the challenge which was horrible for me. Your rash could be Dermatitis herpetiformis... -
Welcome Lady Diver! In the US FDA regulates that wheat must be disclosed in a product. Jiff would have to reveal if the mono diglycerides were wheat based. It would look like this: mono diglycerides (wheat). I can't do Jiff because of the soybean oil. Didn't know I had a problem with soy too until last August, that was after being a year and a half...

ARCHIVED Your Tips For Easy Weight Loss?
ksymonds84 replied to Lynayah's topic in Related Issues & Disorders
Also remember to keep you water intake up. I remember reading to divide your weight in half to get a good idea of how many ounces you need. Many times when I think I am hungry, I am actually thirsty. Also, I am ravenous for days after I've been accidentally glutened, probably because of the D the glutening caused. I'm actually a thin Celiac (probably... -
ARCHIVED Can A Celiac Live In A Gluten House?
ksymonds84 replied to karenhockley's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I know what you mean Patti, my husband sometimes knows before me that I've been glutened! He knows my fog symptoms right away! I also agree that it is good to hear what works for others. -
ARCHIVED How Long Before You Start To Feel Better
ksymonds84 replied to New-To-This's topic in Coping with Celiac Disease
In the beginning some with Celiac will be temporarily lactose intolerant. Also, some not all have other intolerances such as dairy (protein casein) and soy being the biggies. After close to two years I finally feel great after discovering the soy intolerance as well. You may want to limit or eliminate dairy for a few weeks to see if it helps and again... -
ARCHIVED How To Get Family To Be Supportive
ksymonds84 replied to jackay's topic in Parents, Friends and Loved Ones of Celiacs
Benadryl is also a safe option for insomnia. My son's doctor suggested it for him. It can make you a little drowsie in the morning though, so if you have to be somewhere very early you may want to use it on the weekends only. -
ARCHIVED Gluten Free, Still Not Feeling So Good
ksymonds84 replied to amberlink09's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I agree with Bully 4 You, with a Celiac diagnoses you should be able to get appliances for your room. My daughter is working in the food hall and says she feels so sorry for those with celiac because even though they have gluten free options, the cross contamination is ridiculous! -
ARCHIVED Can A Celiac Live In A Gluten House?
ksymonds84 replied to karenhockley's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I agree and also live with gluten. Everyone is careful with me and we all get along great. My daughter will be coming home next week from college and will be expecting all her wonderful gluten Christmas goodies that my hubby and she will make together. I have three children and only one has a recent diagnoses of celiac (she is older and doesn't live with... -
ARCHIVED Nuts Without Cross Contamination?
ksymonds84 replied to bethmon's topic in Gluten-Free Foods, Products, Shopping & Medications
Nuts can be hard on your digestive track if you are not healed yet. Give it some time and maybe try them again later (almonds are a good source of calcium when you are dairy free). Some ways to keep your weight up would be pasta dishes (tinkyada is my favorite gluten-free pasta), rice, potatoes, and protein from chicken and beef. Earth balance just came... -
ARCHIVED Had Reaction From Uno's Gluten-free Menu

ARCHIVED Xanthan And Guar Gum Intolerances?
ksymonds84 replied to emcmaster's topic in Food Intolerance & Leaky Gut
Guar Gum bothers me as well. I noticed it big time when I used Bob's Red Mill pizza dough and their cinnamon bread. If you google guar gum, you will notice all the references to it being a natural laxative. Too much xantham will get me as well but can handle small amounts in Udi bread ect but if guar gum is in the ingredients, it will defiantly cause me... -
to replace soy milk in your cereal you could do almond, hazelnut, hemp, or coconut milk. Some brands have added the calcium and vitamin but I also take a vitamin supplement. Pacific is a good brand. Once I eliminated the soy, I rarely have stomach issues now. So maybe you've found a new answer as well.

ARCHIVED Help With Enterolab Results
ksymonds84 replied to Jaxella's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A note about the Casein. You could be reacting to the other protein in dairy which is whey? I only have a problem with lactose in dairy and only if I eat more than say 10 grams in a serving. Glad you have your answers towards your road to healing! -
ARCHIVED Enterolab Results, A Bit Confused On The Gene Info
ksymonds84 replied to kayo's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm not a scientist either but you would describe yourself as DQ 5 & DQ 4 you carry a single copy of each. If you had HLA-DQ 1,1 then you would carry a double copy. You get a gene from each parent. For me I have two celiac genes so both my parents have a celiac gene. Don't know which one is 2 or 8 since they won't get it checked out but when they... -
ARCHIVED Why Is This Such A Popular Condition For People To Self Diagnose With?
ksymonds84 replied to silvertail's topic in Publications & Publicity
Hopefully, you'll get more of those are are "for real" and aren't faking, but are understanding about the "difficulty" we present. Yeah, we can be "high maintenance", but we can also be excellent tippers. -
ARCHIVED Why Is This Such A Popular Condition For People To Self Diagnose With?
ksymonds84 replied to silvertail's topic in Publications & Publicity
I own two restaurants with gluten free menu's. I've noticed that when I have the celiac association's dine around club out, there are many more women attendee's than men. I think women are more willing to be vocal in restaurant settings than men (there are vocal men too guys so don't get mad at me, I just see more women with gluten free menu's ect. and... -
ARCHIVED Enterolab Results, A Bit Confused On The Gene Info
ksymonds84 replied to kayo's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The elimination of soy will get easier. I was overwhelmed at first too but once I removed soy, I finally felt better! I have eliminated ALL soy such as soybean oil, soy lecithin anything soy! Sprectrum makes a good canola mayonnaise and Earth Balance has an awesome soy free butter spread that you can find at most health food stores now. I make my own... -

I have a shared kitchen as well. My parents are the only people who stay with us and I put my toaster away and keep out the glutened one on the counter just in case my dad has a pre coffee fog.

ARCHIVED Received Enterolab Results
ksymonds84 replied to sunnybabi1986's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yes, there is the ELISA blood test. Some say accuracy is variable but when I accidentally eat soy, I alway get a hive reaction on my face so it was accurate for me! I also threw in the soy test with enterolab when I was at my whits end (before going to a GI for biopsy ect ) and it also was positive. 10 being positive and me being 31. So it matched up. -
ARCHIVED Received Enterolab Results
ksymonds84 replied to sunnybabi1986's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Not sure what you are asking of me. My response was to original poster wondering if her number's were not high enough and giving her some insight. I was officially diagnosed celiac in august after a biopsy, I don't have any symptoms that need to be discussed. sorry if I wasn't clear -
ARCHIVED Thanksgiving Screw Up
ksymonds84 replied to summerteeth's topic in Coping with Celiac Disease
I have vomited with a glutening. Never a cross contamination but if I accidentally ate something that contained wheat. I would defiantly vomit if I ate real stuffing. I also in the past would vomit from migraines so maybe too much gluten sets this off in us. Sorry you had to experience this.
