  1. That is excellent advice...I still run into people (but getting better) that will ask "what is gluten?"
  2. Very interesting. Every time I made a homemade pizza crust using unflavored gelatin, I always reacted. Didn't know why but stopped using the gelatin. All the other ingredients in the pizza I am fine with.
  3. Benvinit, Sorry you are in so much pain. How long have you been gluten free? I hope that you can someday add more whole foods to your diet again. ~hugs~
  4. I agree on you with the bloat. Going low fructose made my stomach pretty much flat again especially the area just below the rib cage, I had a little shelf so to speak. When I accidentally eat gluten or high fructose, I puff up big time and look prego since I'm thin everywhere else. I have heard of the RPA diet, many on my fructose malabsorption group are...
  5. I was able to add back in low lactose dairy after 9 months or so being dairy strict. I still cant drink regular milk or cottage cheese, but can have up to 2 TBS of cream cheese or sour cream at one sitting, and can have up to 1/2 cup of real vanilla ice cream, provided that they use only sugar and not high fructose corn syrup (different issue). Also, I...
  6. I've been seeing quite a few posts related to not getting better on the gluten free diet and wanted to tell my experience to give some hope. I'm into my 3rd year gluten free now. The first 3 months I had big improvements (I lost quite a bit of weight from having daily diarrhea) but still had problems so I eliminated dairy and for the next 9 months did even...
  7. Hi Sarah, my Sarah was just diagnosed in August before heading off to her sophmore year at Boulder. She is pretty familiar with gluten free because of me but still had a lot to learn. Do you have a microwave or refrigerator in your dorm? If this is not allowed see the disability dept and they should give you special clearance to have these in your room...
  8. Thats very odd. Rudi has been around for a long time and makes many non gluten free products. I am from Colorado (its made in Boulder Colorado). Are you saying they accidentally put organic wheat bread in their gluten free packaging? If this is the case you should call them directly so they know they made a mistake, the store may not do this.
  9. My husband emailed them and got a response that they are having a tough time delivering here in Colorado but did give him the GROCERY stores in Colorado that does have them and the closest is about 40 minutes away being on our way to Denver when we go to a Rockies games....so there is hope! Being 3.2 won't bother me as long as the taste is still good.
  10. Colorado is a 3.2 state so that explains it.
  11. I like to use Redbridge in my beer batter for deep frying. Gives it a yummy flavor but haven't been able to find it here in Colorado. My sister in law asked at a liquor store and was told it wasn't being produced anymore. Anyone got a scoop on this?
  12. So glad you ventured out! Eating out can always be scary but like you said, if you find a knowledgeable staff that can make you feel confident, then you can relax and have a good time and focus on conversation and having a good time instead of food.
  13. Corn is safe for people with celiac. Having said that you could have an additional intolerance to corn or as the other poster said it could be cross contaminated. I use mission corn products (torillas and tortilla chips) and have no problems with them. Frito Lay will make me sick....but thats my personal experience, I think the frito's are just too greasy...
  14. Its that time of year when I have tons of tourists in my restaurants. I worked very hard on creating an easy to follow gluten free menu for celiac/gluten intolerant guests. My college kids work for me during the summer and they go nuts with guests saying Oh give me the french fries instead of chips and my daughter will say, its not a dedicated frier and...
  15. When I did the gluten challenge last year for my endoscopy it took 1 1/2 months for the symptoms to come back and they came back worse than ever!
  16. Thank you Patti and Lisa, I didn't mean for this thread to get so heated.
  17. I get these on my tongue too and they hurt. Always told it was geographical tongue. I just got over a bad spell of them so I did some digging and found these articles stating that dermatitis herpetiformis can indeed happen on the tongue Open Original Shared Link you will find it under clinical manifestations Open Original Shared Link and this...
  18. Yes, this is what I always believed to be true, just getting desperate I guess. I am feeling better today, so maybe whatever it is may be finally working its way out of my system.
  19. okay, I recently posted a thread that I've been sick for a couple of weeks and can't figure out why. I just happened to think of my shampoo when I was showering and sure enough both had hydrolyzed wheat protein in them. They are fairly new bottles but I can't remember when I switched from Panteen to them? I have always been part of the camp that has believed...
  20. For almost two weeks now I've been having stomach issues and arthritis type pains. I know for sure I was glutened last Tuesday night in a restaurant in Vail and the next day my geographic tongue went haywire (burning and itching)so I'm dealing with that too. I thought I had figured it out that the tea I was drinking everyday had soy lecithin in it but I...
  21. The celiac blood panel test is not perfect. 30% of people with celiac will show a false negative children even higher but not sure about teenagers. I would suggest that you have the panel run by a doctor that knows to test the FULL panel. If it shows negative and they are still having symptoms and you don't want to do an endoscopy you could then maybe...
  22. Sounds yummy. My favorite is to bake 2 thick Mahi Mahi fillets for about 5 minutes at 350. Then pull out and top with coconut milk and a little salt, then I top with Crushed rice chex that has been mixed with 2 tbs butter 2 tablespoons of gluten free all purpose flour and 1/2 cup of crushed macadamia nuts. Bake again for 15 minutes, very yummy!
  23. Panko are Japanese bread crumbs, which are coarsely ground and tend to be light and crispy. Hubby and I are foodies and the thing we love to do most together is create gluten free recipes to substitute for our old favorites.
