Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If your symptoms go away on a gluten-free diet it would likely signal NCGS. -

Welcome to the forum! I think a big question you left out is, should you continue taking the anti-acid medication, especially if this is a PPI (proton pump inhibitor), which many celiacs are wrongly prescribed before being diagnosed with celiac disease. Such meds can cause nutrient deficiencies in the long term, which doesn't necessarily help with your situation...

If the bags of flour you move leak and create dust, perhaps it gets on your skin, in your month, etc., which may cause an issue, but it seems unlikely to happen unless a bag is leaking. I would wash my hands well after moving such bags, and perhaps consider wearing a covid-type mask at work. If you have DH you will likely also want to avoid iodine... -

Did you have an HLA blood test for genetic markers for celiac disease? This would only tell you if you are in the ~40% of people who have the genes that may include you in the pool of people who could develop celiac disease. -

If I were you I'd give the gluten-free diet another couple of months before deciding. You can always go back to gluten and do a gluten challenge for another celiac disease screening, but if you have DH you could undo a potential recovery by eating gluten again. On a side note, I only had DH on the back on my right thumb, and it never appeared anywhere... -
