So I can't see the scale used for each of the tests you had, however, it's clear that you are high on several of them. Did you ask your doctor about these results? We can't diagnose you here, but it certainly looks like you've tested positive for celiac disease. Ask you doctor for clarification.

Yes, be sure your diet is 100% gluten-free and you are not getting any hidden gluten. Bananas can help slow things down, as can white rice. You may also want to be sure you are getting enough fiber...consider pure psyllium fiber. Last, you may have additional food intolerance issues. It is interesting that he won't eat cooked foods. Do the foods he avoids tend to be items that would normally have gluten? The items you mentioned that he won't eat seem to be items that would normally be off limits. I wonder if he fully understands the idea that gluten-free versions of them are safe? Also, here are some kids recipes: /celiac-disease...

To me it seems that you have some pretty severe absorption issues that you should discuss with your doctor. It would probably make sense for them to check various vitamin and mineral levels in your blood, and even follow up and do celiac disease antibody tests to make sure you've been 100% gluten-free. If you eat out you should stop doing that for a while...

Distillation removes all traces of grains...I don't doubt that recovering celiacs my not tolerate many things until their gut heals, however, drinking distilled spirits made from grains should not cause flattened villi or trigger celiac disease. -

The current recommendation for children is to diagnose celiac disease without a biopsy, and it's unclear to me why the same recommendation wouldn't also be true for adults. Taking that many pills would not be very appeasing to many people...they carry a choking risk, there may be cellulose or other ingredients in the capsules that would likely make taking so many a turn off.
