The Nima sensor cannot test distilled or hydrolyzed items, which it says on its site.

I am not making any accusations here, but another possibility is that she could be cheating on her diet, or getting accidental gluten. In my experience having a teenage daughter, it was her cheating that caused her antibodies to stay high. This drove me nuts for a while, and after I realized that I really could not control her I at least got her to agree...

If I were you I would get a genetic test done on her to see if she carries the genes necessary for her to have celiac disease. A negative blood test with a mild positive biopsy would also leave me with many questions. -
If the vinegar is fermented, then all ingredients used to make it must be gluten-free for it to be labelled gluten-free. If the vinegar is distilled, it can be labelled as gluten-free no matter what ingredients are used to make it, so distillation renders it gluten-free.

Yes, the Canadian article was about disability insurance, and I may be grandfathered into the company health plan (2006). I will check into that because it may make sense to go through Covered California to see if I can get a better deal. Is it possible that you also have an issue with dairy/casein? Many people with celiac disease, including myself, have, at least temporarily, additional food intolerances after being diagnosed. This is due to a condition called "leaky gut" and once you successfully heal your gut with a gluten-free diet for several months, or even up to a year or two for some... -

Regarding #7, you would not want to treat parasites unless you first went to your doctor and tested positive for them. At which point, the doctor would treat you for them. -
Malt vinegar is fermented, not distilled. The new rules state that anything distilled is gluten-free, no matter the source. Hydrolyzed products made using wheat or other gluten grains cannot be used in gluten-free products, and must declare "wheat" on the label if wheat is used to make it.

BTW, regarding my health insurance going up in the USA. I am not 100% sure since the ADA (Obamacare) has been in place if they are able to raise my rates due to me having celiac disease, but I suspect that they can. I could be wrong here, but the ADA simply says that they can't deny me coverage for a pre-existing condition, but I do not believe that there... -
Don't take this as official advice, but I have to deal with Kaiser Permanente, which is about as close as it comes in the USA to social medicine (it is a "not-for-profit" health care provider started by Henry Kaiser to provide free health care for his WWII ship building workers). In cases where I want to be tested for something I've been know to answer...
