  1. wow- i cant believe your doc- usually the docs refuse to test UNLESS u have the diarreaha... geez... 1st of all- it is your body and your health- just takes a simple blood test- demand it- your doc has no right to refuse a celiac test to u.. thats just ridiculous!!!!! absolutely ridic 2nd- it could just be classic celiac... or a parasite ... or BOTH...
  2. jessica- i recently read that using butter makes a flatter cookie, and shortening makes a fluffier cookie, tho i forget what exactly shortening is- is it all vegt. oil? or just crisco?? anyways- with this gluten-free mix i made- i used butter- BUT- i refridgerated the dough and the cookies were fluffy. i think u only have to refridgerate for maybe 6 hours...

  15. i use this kind: Open Original Shared Link (it's organic, and uses sugar instead of HFCS, and im pretty sure it's gluten free). i dont have any reaction at all to this kind. if i use the nakano brand i react to the HFCS- it makes my heart pump, and sometimes makes me sick to my stomach-
  16. we've got the same ridiculous problems over here with our health care system and our "in the box" doctors. we all understand your frustrations. the gluten-free diet can be expensive of course- i know. what about sometimes just simply making a pot of basmati rice instead of gluten-free rice pasta.. its really yummy. sometimes i even love it with my bolognese...

  19. i wouldnt be nervous at all.. you're now on the path to feeling much much better and being healthy. just go over it all with your doc- ask if everything else looked okay. and if you have any other concerns- ask him if and when u should maybe also get a colonoscopy. most of the time everything is great down there, but i had a colonoscopy before i self diagnosed...

  22. ya- i would assume uncle ben's would prolly have cc- they have SO MANY boxes with the vermicelli in them. i always by rice that's certified gluten free... and ive bought several brands of basmati & texmati and have been fine (no uncle ben's). i also live on Tinkyada brown rice pasta- never a problem. there's a gum called "Glee" and it's pretty free...

  24. hey- 1st off- you may want to research more (idk)- but i THINK butter may not be a problem... either it doesnt have lactose- or it doesnt bother a lot of people with lactose issues. it's NEVER bothered me EVER.. and i dont use it sparingly either.. out of all the alternatives- in my honest opinion, i think butter is the healthiest. ghee is even better- but...
