  21. You already have one autoimmune disease which puts you at risk for getting another. Eating gluten makes that more likely to happen. You might like to look at the autoimmune form of the Paleo diet. Robb Wolf's website is a good place to start.   22. It is easy to make a mistake when you are first on the gluten-free diet; be very careful on your vacation! That's just not a good time to be uncomfortable. Have you considered a trial of eliminating dairy, or at least casein? That can be a factor for the sinus issues you mention.
