  18. My best guess is that you need greater amounts of gluten than are present in these grains to invoke a reaction. Sensitivity levels vary. I think that if you ate a whole bunch to give yourself a higher dose, or maybe even if you continue to eat them for a longer period of time, you may see a reaction.   20. I also had neuropathy symptoms that resolved on the gluten-free diet. However, I am super sensitive and had to do mainly produce and unprocessed meats. If gluten, then soy and corn elimination don't work for you, it may be worth giving that a try next. I hope you feel better soon.
  21. I am one of the fraction of celiacs that react to oats as to gluten. I would suggest trying just a little bit the first time in case you are also in that category. I wish that I had. I was so eager to have oats that I had more than a little bit and boy did I regret it. Don't be afraid, just be cautious.
