  1. Also: http://www.fda.gov/downloads/Food/FoodScienceResearch/UCM264152.pdf Health Hazard Assessment for Gluten Exposure in Individuals with Celiac Disease: "Available evidence suggests that many aspects of the response of those afflicted with celiac disease to a gluten challenge vary widely. " "Because of the significant degree of individual variability in...
  2. The science does not agree with you, Irishheart: http://www.ncbi.nlm.nih.gov/pubmed/17209192 "After a baseline evaluation (t0), patients were assigned to ingest daily for 90 d a capsule containing 0, 10, or 50 mg gluten." "One patient (challenged with 10 mg gluten) developed a clinical relapse." The others did not. That "smidge" of gluten did not cause...
  3. The only scientific information I gave was from the USDA.
  4. I don't understand how this relates to what I said. I said "I don't know if it is the feed, or something else about the winter, like not being in the sun."
  5. I think that it varies depending on how sensitive you are, how long it is since the last time that you were glutened, how big a dose you got, and things like that. I don't think that there is a definitive answer which is why you can't find one. I don't think that it inconceiveable that you could have reacted so quickly. I think that I have. I hope a that...
  6. The OP asked this: "I've read that people who are super-sensitive like me can sometimes react to eggs if the hens were fed gluten. Have any of you found that there some truth to this?" I answered with my personal experience. I reacted to eggs. Later I found that I can eat pasture fed eggs that don't get supplemental feed in the summer and I freeze these...
  7. Thank you for understanding the point that I was trying to make. Thank you for restating it in a way that might make sense to others. I find eggs a valuable addition to my diet.
  8. I was just looking at the USDA egg site for another reason and I noticed this:" What does it mean when an egg floats in water? An egg can float in water when its air cell has enlarged sufficiently to keep it buoyant. This means the egg is old, but it may be perfectly safe to use. Crack the egg into a bowl and examine it for an off-odor or unusual appearance...
  9. I can't find a better diagram. It concerns me that the information comes from someone's blog, is a drawing and doesn't appear to have any backing. A search of the author's name did not turn up any credentials. I did find this from the USDA: http://www.fsis.usda.gov/wps/portal/fsis/topics/food-safety-education/get-answers/food-safety-fact-sheets/egg...
  10. Farmer's markets and buying in bulk save you lots of money.
  11. Thanks Kareng, I guess the diagram was missing the mutual oriface that both of those passageways went through. I thought it was illustrating a new hole being created as the egg was coming out. I guess I like my pictures to be more scientifically complete.
  12. From picture 1 to picture 2 where the egg is laid, a new hole appears. That seems strange to me, but I have an appointment and can't research it now. Anyone?
  13. This happened to me before I got my diet figured out and healed. When I'm well it happens once in the morning. It is definitely embarrassing, especially when you can't make it to the toilet in time!
  14. Thanks for the information. I'll watch out for Aveeda.
  15. Partially digested food and eggs come out of the same "highway".
  16. I have recently been in contact with a parent of another celiac child at the high school. This child has also missed a lot of school due to illness. This parent is having problems with getting education support for days missed. We had problems with them no longer allowing make up work for days missed. We didn't even ask for educational support. Be sure...
  17. This is my experience. My son and I are both very sensitive. My daughter is a little less so, but quite sensitive too. We thought that we were reacting to a national brand of high omega 3 eggs from the grocery store. When we eliminated them we improved. Coorelation is not causation so we can't be sure that the eggs were the cause of the problem. We...
  18. Would it be possible to talk to your boss about starting a gluten free line? You might still be able to supervise other bakers doing the gluteny stuff if you were careful, but stuck to gluten-free yourself.
  19. Googling celiac disease and thyroid yielded lots of results.
  20. I tried to find something saying that fortified foods are better than vitamins, but I found the opposite from the Harvard school of public health.: Open Original Shared Link
  21. It is recommended that melons be scrubbed with a produce brush before consuming because they can cause food poisoning: Open Original Shared Link Sorry to continue on this side track, but 33 people died of a listeria outbreak in 2011.
  22. SMRI explained it well. I was questioning fortification being better than taking a vitamin pill with a meal. I was questioning numbers 2 and 3 on your list of bests ways to get your vitamins. I agree that a well balanced diet is the best alternative.
  23. Additive: Open Original Shared Link "A substance added in small amounts to something else to improve, strengthen, or otherwise alter it." Food additive: Open Original Shared Link "Open Original Shared Link such as Open Original Shared Link " Open Original Shared Link "a food additive is any substance added to food."
  24. I'd like to see some evidence for that statement. I think that taking a vitamin pill with a meal would be equivalent to eating a food fortified with those same vitamins.
  25. It is possible to have a problem with oats. Some celiacs also have avenin intolerance because the protein in oats, avenin, has a similar structure to gluten in wheat, barley and rye. Open Original Shared Link I am as over reactive as they come and even I agree that cauliflower and watermelon should be fine. I also agree with Gemini about mercury amalgams...
