  1. If you think something is bothering you, but it's only a little bit and you can't tell for sure, try eating a bigger serving. Eat 4 times the normal amount. Then you will know.

  2. Once you have come up with a safe diet, keep a food journal of what you eat and how you feel. Only add one new thing a week. It can take awhile to know if you have symptoms.

  3. For meat, get it cut up at the meat processor, not recut at the store where it is more likely to get cc due to the variety of things cut in the same place.

  4. With seafood, have them put on fresh gloves and get it directly from the box that came from the supplier. Once it has been set out, who knows what has touched it.

  5. With your meat, avoid chicken. The way they are processed the feces tend to contaminate. Cooking to 165 degrees as recommended will kill salmonella, but it won't get rid of trace gluten.

  6. The Super Sensitive Diet.

    Do this for two weeks.

    Have only produce and meat. Check toiletries soap etc. carefully for gluten content and be careful to consume as little as possible.

  7. We have had problems with salt. I think that only the most sensitive of super sensitives have to worry about it. It ended up that they were using a gluten containing soap to clean out their lines. They have since switched brands. To find out you can stop eating the salt for a few days and then eat it again.   8. I did an online search and those tests aren't terribly accurate, but don't take my word for it, do your own. Elimination diets are supposed to work better to determine food sensitivities. My son tested negative for everything, yet when he eats walnuts his tongue swells up. His doctor even told us that the tests weren't accurate.

  14. I don't have very much in the way of other intolerances. I have discovered one to Kumquat skin though. Glutening leads to a big range of symptoms GI as well as neuro. With the Kumquat skin I just get the GI issues. It did confuse me for a little while though. I find that glutening from smaller amounts affects me differently than larger amounts of gluten...

  16. I agree with Stef. I get lots of different aches and pains from glutening and sciatica is one of them. If I keep limber I have less problems. Core exercises are important as well as the whole back of the leg.
  17. Actually, being a scientist, I have always been interested in those clinical trials. I also live near a medical center. I always check them out, but I hardly ever find one that I am qualified for. I don't only look at the celiac ones either.   21. As you can see gluten free doesn't mean absolutely no gluten. There is no test to measure that. There are tests which measure to lower levels than 20 ppm though.
