  1. What you have to do with the dairy is decide whether you are lactose intolerant or allergic to casein, the protein in milk. If you're allergic to casein, you will have to avoid all dairy in everything even medicines. If you are lactose intolerant, like me, you have to see how sensitive you are. I can no longer tolerate anything fresh like milk, cottage...
  2. It will help you to get into the mindset if you start very simply with your diet. Eat whole foods that you prepare yourself for awhile and let yourself adjust to shopping, cooking and eating in this simple way. When you feel you have it mastered, then add new foods one at a time every few days. That way you won't be overwhelmed in the market or the kitchen...
  3. Some gastros seem like they won't let the words "Celiac Disease" pass their lips unless they see an intestine in mangled little pieces. Post your blood work as mentioned. It looks like you have all the indicators to me. You're ready to start the gluten-free diet. The results should prove to you what your child's body needs and doesn't need. Posting...
  4. Look carefully at your spice cabinate. Spice blends often have gluten added. I didn't think about it till another poster mentioned she double dipped into various spices with gluteny spoons. Guilty! I had to throw a bunch of those out. I felt better then. I also realized I was reacting to some delicious Dutch cocoa I bought it back in the day at a bulk...
  5. I too feel better on no grains. But I'm now just eating grain light. I have rice 2 or 3 times a week. I did make those brownies, you know the ones, and I have been eating those this week. But I won't probably have those again for a month. I've been craving enchiladas so I will make those sometime soon with corn tortillas. Actually, corn is the grain I...
  6. You do have ups and downs but that does sound like a reaction to me. What are you eating in the evening? Do you take medicines or vitamins before bed? What do you drink?
  7. A major traumatic surgery like you had is the likely culprit that turned on your gene. You don't desensitize yourself by not eating a food for awhile. After all I only eat pumpkin around Thanksgiving and watermelon in the summer but I don't get sick from it.
  8. If you don't like rice, how about potatoes? I especially like them sliced over a salad. Yum!
  9. Did you ask them what IGA number would be considered IGA deficient?
  10. I am no expert on blood work but so-o-o many people comment here how there initial tests are negative that I just have to think that there must high numbers of false negatives. I just really think a better diagnostic test would be much more valuable. How many persons continue to eat gluten damaging their bodies because of these tests?
  11. Congrats! I'm glad you have the proof you wanted.
  12. My friend's daughter was dx'd through blood and biopsy but didn't like her gastro. They went to another dr and like him a lot but the first doc wouldn't share the pathology. (I know they should have insisted.) He had her do a second endoscopy and she had to gluten challenge for 6 weeks, 1 slice of bread a day. I would not have done it but she chose to with...
  13. I don't think you can make that leap in reasoning as each person with celiac disease is so different. I don't really think that the medical community has a good handle on malabsorption; how exactly it works and how each person responds to it. It would make it easier if we could just plug into a computer for diagnostics like we do our cars!
  14. Some of your symptoms could be related to vitamin deficiencies. Have you been tested for that? Do you take vitamins or supplements? Right off I can say that magnesium will help with the constipation. I take a little over 600 mg's but you have to work up to that amount. It also helps with sleep and blood pressure. What's your diet like? You could...
  15. You could clean it and still react. Better safe than sorry!
  16. I do have a lot of the alternative flours but have not used them in awhile as I've been eating low carb. I did try the Betty Crocker brownies and like those a lot. I usually keep on hand: eggs, corn tortillas, Tinkyada pasta, cream cheese, butter, Hormel Naturals ham, Constant Comment tea, Koolaid, pineapple, green beans, green chilis, green chili...
  17. For coating meat, you can use instant potato flakes or Rice Chex cereal or crushed potato chips.
  18. Are you giving her processed foods? Or breads or foods labeled gluten-free? Lots of these have low amounts of gluten that can affect the sensitive. It does sound like she's getting gluten somewhere, sneaky gluten. The other possibility that comes to mind is food dyes. My little niece is sensitive to red dye and she turns into a little monster on it...
  19. If you're going to ask your dr to test you, make sure you are still eating gluten every day. The tests won't be accurate if you are not eating gluten.
  20. I believe I would make a list of every single symptom you've had and chart how the gluten-free trial has affected each one; 100% gone, 50% gone, unaffected, etc. I would review your family history and gene testing with him. Also bring the blood test results with you. You didn't mention what those were but they could be interpreted differently in a second...
  21. You may find as time goes on that he did have some symptoms of celiac disease but you didn't recognize them as such. Maybe they were subtle or you didn't know these could be attributed to celiac disease. Also after being gluten-free for awhile, sometimes an accidental glutening will kick in a strong reaction like you've never seen before. The people I...
  22. My brother always became ill from water away from home. This was a problem as we traveled all summer for our families business. Mom just started carrying his own water wherever we went. I read another poster say she couldn't understand why she was feeling so bad and having symptoms again when she hadn't changed her diet. She went on a trip and improved...
  23. I only buy Hormel Naturals. There with the presliced meats not the deli. They have no nitrites, trates or gluten and are delicious. I eat the ham for breakfast every day.
  24. Corn tortillas do suck, when cold. Ditto from me on heating them first. I actually toast them twice in my toaster, then butter them. I also make quesadillas in the skillet with 1/2 olive oil and 1/2 butter. Then add your fave toppings. Even peanut butter and jelly is good this way. I love the Tortilla Towers you bake also. I used to make them for my...
  25. It's natural to dream about the things we are adjusting to or anxious about. You work out those fears in your dreams. Lots of times it is fear that seems irrational like a grocery store with no produce or meat, all gluten-free naturally. For weird dreams, you tell yourself before falling asleep when I have this dream again, I will realize it just...
