  1. I make the pizzas with corn tortillas as a base. Toast them until they're firm in a toaster first or they will be too soft. My mom makes "Thingees". She takes an extra long toothpick, coctail style, and threads a chunk of pineapple, piece of meat, cheese and an olive. Use your favorite kinds, we've tried them all; summer sausage, chicken, turkey...
  2. For your tuna salad, I don't use measurements but here's what I put in it: Tuna Mayonnaise mustard finely diced kosher dill pickle finely diced celery You can pack it firmly in a soup bowl then upend it onto a plate. Sprinkle with a little paprika for color, then suround with pretty cut celery and carrot pieces. It will look...
  3. I can get up but it's like the Zombie for me. The brain fog with the fatigue along with mood swings can be like a horror movie for those around me. I generally start with a fair warning and also a request, "please look out for me today. If I'm doing stupid things, stop me. If I'm falling all over myself, tell me to slow down,...uh..thanks."
  4. I don't have the results handy but I think it was the ttg that was 5... Can you describe what your neuro symptoms were like and how severe they were? Do you recall the pattern of your recovery? When you first noticed you were getting better, etc... Were your tremors worse when you were having a foggy episode? I have had essential tremors since I was 11 but...
  5. Cut out gluten immediately!! You are lucky to have been tested. I was not able to test when I had a severe rash, DH. I went on the diet to elimanate the rash. I had no idea the other problems would clear up too. My stools became normal, it had been years. Color came back to my cheeks and really a host of other problems cleared up that I didn't even think...
  6. Sorry you feel like an in-between with your dx. It sounds like you are benifitting from eating gluten-free. When you have a reaction like you described, it seems to correlate to the gluten. If you post those test results here, there are those who can interpret them for you. I have heard of dr's who told patients they were a little intolerant or just slightly...
  7. I have been dairy light for most of my life. I just substitute soy milk for any case where I used to have fresh dairy. I like the Silk Vanilla. It is slightly sweet which makes it good for drinks and puddings. But if you make savory foods like scalloped potatoes, soups or casseroles you must use the unsweetened Silk. It's very good. There are also rice...
  8. I liked "Eating Gluten Free for Dummies".
  9. What about fruit roll ups? I haven't looked at those in a long while so I don't know if they have apple. My daughter & I used to like to go to garage sales together and I would pack our snack pack with grapes and cheese. You could sub your DD's kind of cheese. Would she eat Rice Chex? My toddlers would love loose cereal. I like Hormel Naturals...
  10. I think it would be incredibly hard to stick to the GFD if you are asymptomatic. I have definate, strong, some worrisome symptoms and this keeps me in line. I thought about your dilemma and I guess I just have to say I would probably look at it the way I look at other things in my life. I know I can't control how I die but I take certain precautions to...
  11. I was glutened last time I had Lay's Classic, before that no problem. I'm crossing those off my list. Sigh...
  12. Man, when I'm hungry, I'm really hungry! Part for me, I think was, no matter what I ate I wasn't getting the vitamins I needed. I added the B12 and that really helped. Now I can feel full and satisfied if I get enough protein. The protein makes the difference for me. It can be meat, nuts, or cheeses. Those things satisfy me like no other. I can't have...
  13. I confess I haven't baked chocolate chip cookies since going gluten-free. Weird 'cause they're one of my all time faves. Actually I've exclusively eaten the PB cookies someone else mentioned. Very easy to make and satisfying. I never really liked PB cookies before this recipe which I tried for my celiac friend. I've been making them ever since. They...
  14. The only food that truly makes me very ill is dairy, however after getting a digestive workup I discovered I had a mild leaky gut, a slight flora imbalance, a small amt of yeast overgrowth, colonic inflammation and reactions to soy, gluten, dairy and eggs as well as other foods. A have not been diagnosed celiac and truly believe i just have an intolerance...
  15. You could have most foods that have a gluten-free componant if they simply set up the food in a sensible way. They can put the gluten-free food first on it's own table and the gluten food across the room so the spoons and crumbs won't be shared. Then ask if the silverware can be last instead of first or maybe just at the eating tables only. That way won...
  16. Always, always take your own food. That means to social events, family gatherings and restaurants. Nothing is worse than arriving and finding nothing safe to eat. It's OK if you take your own food and then don't need to eat it. But it's hell to be starving and everyone is eating and drinking and laughing around you.
  17. I found my spring roll wrappers in my local Martin's grocery store in the Asian section. Granted in another local Martin's they didn't carry them. They were in round clear plastic box. They come dried and you have to moisten them with water. I use a 10 inch pie pan and add water to they can soak about 30 seconds. Then they do seem like skins they turn...
  18. A little more info could help us to give you any guidence we might have. What is her diet like, med's she takes, is she in a school or play group? Sometimes it's tough to pinpoint hidden gluten but talking it over sometimes brings to light the culprit. Is she dairy free too?
  19. Just please be gentle questioning your daughter about her father's house. It would make her feel terrible if she thought she was "tattling" on him. Or if he threw it in her face that he got "in trouble" because of her. Sounds like he would do that. Is there any way you can make a meeting about her diet and symptoms, maybe with a mediator, an annual...
  20. That's almost exactly what happened to me also. My gallbladder was also diseased. They kept running tests and dismissing me say that since I didn't have gall stones, I was fine. If I hadn't pursued it, they wouldn't have operated at all. I was very sick and I suspect you are even more sick than I was. Make someone listen.
  21. You know I still get that sometimes and I can't always tell why. I'm lactose intolerant but I can still manage a little butter and aged cheeses. I suspect I may be becoming sensitive to those too. I can't see the pattern yet but a food diary would do it.
  22. In the beginning, I ate the fries, no problem. But then I found this forum and the great fry debate. I made the decision not to have them anymore. The reason is I've become more sensitive as time goes on and I just won't risk it. I've put that in my catagory with "made in a facility that also makes...." I just don't do it. My local place makes fries...
  23. I agree with you that this sounds like some product he's coming into contact with almost daily. What about pets? Do you have pets that eat gluten food or have gluten in kitty litter? I had a "long burn" reaction last year to the caramel coloring in my coffee syrups. Has he been exposed to any remodeling? I understand some dry wall has wheat. What...
  24. I imagine your mom had to go through some very nasty treatments for her colon cancer, like chemotherapy, radiation, etc. You have the luxury of being dx'd with a serious autoimmune disease that has a simple, painfree solution; the gluten free diet. No shots, no chemo, no pills for life, no insulin. There is a chance your insides are heading down the same...
  25. I guess I'm a little confused as well. I have been avoiding products with "natual flavorings" unless I have hard evidence that those do not contain gluten. Am I wrong that small amounts of gluten can be hidden there?
