ARCHIVED Sensitive Disposition
kabowman replied to laluka's topic in Parents, Friends and Loved Ones of Celiacs
I have one son who is very sensitive and at 12 still cries easily and sleeps with Teddy every night. My oldest son has never been that sensitive. One is touchy-feely, one is not (you can figure out which is which). My youngest just seems to be, well, sensitive. Neither appear to be gluten intolerant though so I don't know if that will affect anything, they... -
ARCHIVED Any "home-canners" Out There?
kabowman replied to jenvan's topic in Introduce Yourself / Share Stuff
I am going to jump in too...been lurking for a while. I have been gardening for years - used to have a giant garden the deer ate, then tried the square foot garden and didn't like it as much, now I have simple raised beds that are easy to weed and reach from all sides and to start I only needed 2 yards of dirt. We moved to a new house last April and... -
ARCHIVED Tremendous Appetite
kabowman replied to Nic's topic in Parents, Friends and Loved Ones of Celiacs
My youngest son (who is now 12 and is only 79 pounds at almost 5' tall) would eat all the time. He would eat (and still goes through spurts when he still does) 2 breakfasts, one at home and one at pre-school and we aren't talking small breakfasts but 5 full bowls of cereal, not junk but healthy stuff. The pre-school girls would also bring him doughnuts most... -
ARCHIVED Important Personal Questions About Celiac's
kabowman replied to Mabiac's topic in Coping with Celiac Disease
Well, I can try to help on some but I know there are lots out there with more experience but here goes: 1. I didn't start showing real symptoms until my 30's - being DX later in life is common and many times a significant/stressful event will "bring it out" so to speak. Mine started after my ex sued for custody of our two children. 2. Many are overweight... -
ARCHIVED Food Logs
kabowman replied to megsylvan2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I also used an Excel spreadsheet that I created with room for each meal, snacks, drinks, and symptoms for a week at at time (did the diary for over a month and doing another one now for my youngest son). Having room to write my symptoms down really helped narrow down all the different foods (like I would run a fever and get foggy - for days - every time I... -
ARCHIVED Dairy Issues - Your Experience Please?
kabowman replied to Mongoose's topic in Coping with Celiac Disease
I have noticed that my youngest son (lactose intolerance only) had mood issues when he has lactose. Now, we limit/control the lactose in our house-meaning he only has it occasionnaly and with pills. However, he has it a limited amount at school (he avoids it if at all possible) and at his fathers (who says they rarely have milk in their foods--well, he comes... -
I used to get so upset because I couldn't join in - I was happy to finally be not so sick all the time BUT I was still sad and angry. I would start crying because I couldn't join in for chili dinners with family, giving up my foods, etc. However, it gets so much better. I love my food, I love how healthy I am now, I love how healthy my family is, I love...

ARCHIVED Biopsy Came Back Negative
kabowman replied to hollyd's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My biopsy was negative too - and by a doc who is familiar with celiac disease. I didn't have blood tests because I was already gluten-free by the time I went in to the doc--which could have affected the biopsy but I doubt it. I had several nurses/nurse practicioners (some were friends) suggest over the course of several years that maybe, my problems were... -
ARCHIVED Gross Allergy/intolerance Stories From Waiters/waitresses?
kabowman replied to gabby's topic in Coping with Celiac Disease
I am now the resident expert on most health issues at work too now...strange isn't it. Except, of course, for the one person in the office that thinks my diet is crazy and I am really messed up and if I would just start eating normal (disregarding the fact that my diet is healthier than anyone else's around), I would be fine AND that my son should not... -
ARCHIVED Gross Allergy/intolerance Stories From Waiters/waitresses?
kabowman replied to gabby's topic in Coping with Celiac Disease
I have NOT run into that yet!! When we eat out and the wait staff comes up, I have everyone else order first so mine is the one they remember. Then, I say I am a problem customer, they cook for me here, and I have a lot of food issues and then I tell them how I need my food prepared and cooked, exactly--because I don't want to get sick. We eat out regularly... -
ARCHIVED Corn Syrup & High Fructose Corn Syrup
kabowman replied to FitNut's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I avoid anything with corn syrup but that is because I have a corn intolerance (not allergic in the true sense of the word). -
ARCHIVED Im So Confused About Allergies
kabowman replied to Moongirl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think my son's allergist said that food allergy testing is only right about 30% of the time - but DO NOT QUOTE me!!! -
I eat at a variety of resturaunts - like everyone has said, call the manager, ask, and see if they are willing to work with you. Most corporate offices will try to cover their a#* and cannot guarantee but the managers know what is going on... Some I avoid after they say they can help because I still have problems but most are great. Locally, my Chili's, Outback...

I was able to eat at the Texas Roadhouse in Gatlinburg when we went last summer - the rest of the time, we fixed our own food while camping.

ARCHIVED Blood Test Borderline?
kabowman replied to mommyetb's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My oldest son's test result was 7 too but his doc said anything under 10 was negative--however, he is not showing any symptoms other than food intolerance to nitrates and cinnamon). I am asking that my youngest son get tested now when we see the doc this afternoon (it is to the point where I can't get him out of the bathroom and we don't want to discuss... -
I gained weight after going gluten-free because I was eating foods that didn't make me sick and, while most of my food still goes right through me, it isn't as bad as it used to be. Of course, I compensated for the lack of bread with potatoes (and still do). Also, since I really enjoy my food, the food I can eat, I tend to over-do which I am trying to fix...

ARCHIVED gluten-free/soy Free Stir Fry
kabowman replied to Jen H's topic in Gluten-Free Recipes & Cooking Tips
Thank you VERY MUCH for the soy sauce replacement receipe!!!! That was one of the few things I haven't tried to replace yet. Now I am dying for Chineese food too! -
ARCHIVED Dreams About Food - A New Thing
kabowman replied to DingoGirl's topic in Related Issues & Disorders
I just started having these a month or two ago. I dream about all different types of foods - deviled eggs (which I can now eat since I have my special mayo), guacamole, big, juicy, cheeseburgers on a big fluffy bun, etc. It is crazy! -
ARCHIVED Amy, I Thought You Were My Friend!
kabowman replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
I gave up Amy's because I kept getting sick. Didn't bother to call the company...just not buying their products. -
For years I could only wear titanium earings (I bought my own hooks and changed everything out myself). I can now wear the nickle free earling hooks - nothing with a back, I think they are just too closed up. I found nickle free watches!!!! I had to quit wearing watches and have been looking for several years now and finally found some. Wal-Mart brand...

ARCHIVED Good Gluten Free Pie Crusts?
kabowman replied to momandgirls's topic in Gluten-Free Recipes & Cooking Tips
There is a pie crust receipe in The Gluten Free Gourmet Cooks Comfort Foods and one in The Gluten Free Kitchen--both work fine. I use lard in place of shortening because Crisco has Soy & Corn and the Palm alternative bothers me. It adds no flavor and is incredibly flaky. Pies: apple, pumpkin, pecan. You can also make a cobbler or apple crisp. -
ARCHIVED Gluten&dairy Free Chocolate
kabowman replied to Rae's topic in Gluten-Free Foods, Products, Shopping & Medications
Stardust, have you considered a yeast intolerance? I gave up all vinegar (I tried them ALL) and all grain alchols before I discovered Ihave a problem with yeast and then my searching showed me that yeast is the common connection in all of these. I have even given up most fruit and only occasionally indulge in under-ripe fruit. Wine is horrible and no yeast... -
ARCHIVED Does Anyone Know If Tatoo Ink Is Gluten Free ?
kabowman replied to rlemmon's topic in Coping with Celiac Disease
I love mine (3) and just had a large tribal with feathers done on my hip (I am done with kids). My next will be on my lower back and I think I have gotten my husband of 5 years finally interested in getting his own. -
ARCHIVED Recipes For Leftover Turkey
kabowman replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
I make turkey soup, just like chicken but with turkey. Turkey salad with mayo, celery, onions, and black olives. Turkey pot pies. Boil the carcas for the best broth ever (make sure to use sparingly by watering it down when you use it later) and freeze. Works great for rice. I love fixing turkeys. We eat for days. I have some turkey soup that I am going to... -
ARCHIVED Gluten Free/dairy Free Calcium Supplements?
kabowman replied to LqrMan's topic in Gluten-Free Foods, Products, Shopping & Medications
I use the CVS pharmacy store brand - they are soy, corn, gluten, dairy, wheat free and I use them with no problems (I have also used the Marsh brand in the past).
