  1. My sister has a nightshade intolerance - I think I have a problem with potatoes but refuse to acknowledge right now because my diet is already so limited I hate to cut those out too - yet.
  2. I have not been formerly DX with celiac disease either but do have gluten intolerance. I had the same reacation from most of my docs...stay away from gluten for life, glad you figured this all out, move on. I did have a biopsy last year but was gluten-free for a while before and refused to go on gluten for test purposes. My oldest son, based on stomach problems...
  3. Vanilla beans in a bottle with vodka in a dark cabinet for about 6 months (shake about once a month). I use potato vodka.
  4. I will leave the malt vinegar question to someone who knows more than I do. If you have a problem with all vinegars, which I experimented with myself and I do, you "may" have a yeast problem. There is yeast in the process. I eliminated vinegar and a month or two later discovered it was the yeast in the vinegar that was the problem for me, not the actual...
  5. If you are really concerned, you can use vanilla beans - a quick search on the Internet will tell you how to substitute. I make my own due to a corn intolerance.
  6. Have you checked Burt's Bees stuff? I don't know what the ingredients are but I think their whole line is organic. You can buy it online and several of our local stores carry some or all of their products. I am happy with the stuff I do buy.
  7. Maybe it is another food intolerance which is not uncommon. Not to say that is what it is, but once the gluten was gone from my diet, I was able to identify other foods that were also bothering me via an elimiation diet. My doc also suggested I keep a food diary for 4 full weeks and make room to note any unusual reactions I had which helped me find a couple...
  8. I make homemade chicken soup almost every Sunday and stew every Tuesday or Wednesday. I have now added homemade chili to our weekly meals. All gluten free and fairly simple to make.
  9. One more comment, I don't know how old your daughter is, but my sons ages 14 & 12 both are very picky with their friends and won't put up with that behavior by choice, once they know about it. Also, both are very good at handling difficult situations appropriately and I am almost always impressed with how they deal with difficult people - adults and children...
  10. I agree - I would continue to ask and if you know that some people are just rude, then don't ask them. Know that they will be rude and it is not worth spending your time and energy with them. They just are not worth your time and your daugher will eventually learn that some people are just rude. Sorry...I don't have a lot of patience for people who act supidly...
  11. I have many intolerances but no formal DX of celiac disease. I simply cannot eat these foods. Either way, the hunger does go away but can come back. Also the food cravings appear to be normal based on what I have read and experienced. Right now, mine are olives and I have no idea why. Anyway, you might want to check out EnjoyLife food products which...
  12. I had joint problems before I eliminated all the foods in my signature below. I am not sure which one was the culprit because I did a lot over a few months. However, I do know that one of them was causing my joint pain. I am not sure which is harder to avoid, corn or soy but both are harder than gluten. Corn is a cheap sweatner that is in everything....
  13. I have not found a comercial BBQ sauce or even any receipe that does NOT include vinegar and if you are yeast free then you need to stay away from vinegar too. I have come up with one that works - not the same but the sauce has really grown on our family and everyone loves it. 1 can of diced tomatoes brown sugar (not too much, about 2t) honey about...
  14. I had the same reaction from my father when he visited this summer. He ate a sandwhich on our boat and, I swear, there was a 2-3 foot circle of crumbs and then he wanted to open the cooler right in front of him and I told him no, I would take care of it because of his crumbs...he even made comments about how I kept cleaning the kitchen because there were...
  15. I have even fooled the neighbor's boys (ate dinner with us and my boys) with Tinkyada!! Always rinse the pasta and I then add extra virgin olive oil. As to the rest of the shopping, it gets much easier but until you know what you can and cannot have, it is VERY time consuming because you don't want to make a mistake. Pick up a good cookbook too...
  16. Ditto to my husband...when I offer my cheek instead of my mouth, he rarely complains because he lives on bread, cheese, crackers, beer, etc. However, a nice one on the mouth when he isn't eating all that stuff that would kill me is very nice...nothing passionate unless he brushes first.
  17. I have the same problem coming up with Thanksgiving...the last 2 years it has been at my house and totally safe. This year, at my sister-in-laws house and they live on bread and milk products so I am going down there to watch them eat. Their tiny, cluttered, not particularly clean, gluten filled kitchen just isn't even safe for me to cook anything in while...
  18. I have so many allergies that it is easier to list what I am not allergic to. I have been doing shots now for 3 1/2 years with, finally, great success. I keep taking my meds most of the year, only use the nasal sprays (plural) in the spring, and the eye drops about 8 months of the year. Most people see enourmous improvement within one year. I did my allergy...
  19. Here are some sides (in addition to the many already listed) that we do in place of potatoes. I have one kid who doesn't like potatoes so we often look for alternatives. Mac and cheese (I can't eat so I don't worry about making it gluten-free) - just make it with gluten-free pasta. Cottage cheese Sauted artichoke hearts (with garlic and lemon) ...
  20. I bought some of the Archer chips from Target, which appeared safe from the list of ingredients, however, I got very sick. I won't buy them anymore but I have so many problems you never really know.
  21. Arrowroot flour is an equal (1/2 C to 1/2 C) substitute for corn starch and I use that all the time. I avoid all receipes that call for soy flour because I don't know of a substitute - maybe someone here has a sub for soy flour.
  22. Canola oil is one of the two oils that I use, the other being Extra Virgin Olive Oil. I read in the last few months, can't remember where, that some of the regular olive oils can be "watered down" with vegetable oil and rather than wonder, rather than skimp, I just use the extra virgin which I prefer anyway.
  23. There are some potato vodka's out there if you are willing to pay the price. I am currently using my potato vodka to make my own vanilla for baking to avoid any possible problems.
  24. I think I read recently, in a Living Without mag this summer, that most of the soy we eat is also genetically modified.
  25. I forgot the kissing part - we don't kiss on the mouth very often. My husband lives on gluten, dairy, beer, etc. we just don't go there and have only been married 3 1/2 years. Neither of us seems to really mind, I just offer my cheek when he goes to kiss me and explain that he is drinking beer--if he doesn't do that first. I'm not compaining, just pointing...
