  1. I live near Julian Bakery and pick up both coconut and almond paleo bread. I prefer the almond -- although there was a time I could only tolerate the coconut. This is not a bread to be compared with the best gluten-free breads or homemade -- but toasted with a bit of almond butter is quite nice.

  5. That is a very good question. I doubt anyone can give you odds on this one. All autoimmune disorders are top on my list for much more research needed. What I can tell you is if your next round of antibody tests does not have lower numbers -- I would advise you (as I would my own children) -- to remove ALL gluten for at least three months - six is better...

  8. Did you have original numbers? They should come way down. Mine were never alarmingly high - came down steadily over the first year and are hanging between 3 and 6. If you post results -- many of us can help analyze.

I only saw one for a single visit after my Celiac diagnosis - she - affiliated with a major celiac center was of no help to me. I had already learned the "helpful" facts she knew.
