  1. Welcome Kiki! Your symptoms could be caused by Celiac Disease. You do need to resume eating gluten until all testing including endoscopy are complete. Some Celiac Centers suggest one slice of bread containing gluten per day is enough. I have read that a person needs to ingest up to four slices, but I'd go with what the Celiac Centers - maybe a sandwich...
  2. Welcome! You need a full celiac blood panel, not an allergy test or single screening test. You should be ingesting gluten right up until the endo, so I'd suggest getting the blood drawn on the day of the endo. This way you will have the most accurate picture of what gluten is doing to you. Additionally, should you have Celiac Disease this initial...
  3. Have you spent any significant amount of time completely - as close to 100% as you can get gluten-free - no gluten from wheat, barley or rye from any processed food? If I am remembering your posts this weekend, you were eating gluten on Friday then picked up loaves of gluten-free and gluten-lite items at a specialty bakery and trialed them both on Saturday...
  4. Yes Even when you go completely gluten-free it will take time to rid yourself of these symptoms.
  5. I thought we had answered your question - I'll take one more shot - this is exactly what I did: First 6 months post Celiac Dx: Removed all gluten - had a few accidental glutenings and setbacks but had general digestive improvement - all other symptoms got worse. 6 months to 2 years post Dx: Kept detailed food log, tried removing foods I thought be bothering...
  6. That's what I was wondering, don't dismiss Celiac Disease or NCGI.
  7. Yes surgery can cause symptoms to worsen. And tummy tuck? Don't mean to be nosy, but was this because you have a swollen tummy that you can't get rid of with diet/exercise?
  8. Having symptoms worsen over more than 8 years is not sudden - even if those same symptoms are suddenly much worse - your body may simply have had enough. Do not dismiss Celiac Disease because an ER Doc told you he doubts it is Celiac - wait for the Celiac tests and if they happen to be negative, remove all gluten for at least three months. It is possible...
  9. Welcome Rob! As long as ALL your blood work is complete - you should give up gluten as soon as the endoscopy is complete - there is no reason not to. Good Luck to you
  10. The adjustment will come. Soon you'll your answers will roll off your tongue with a smile on your face. "Well, I eat wonderful foods and have replaced bread quite nicely - I feel much better and know I can manage a serious health condition with the food I eat rather than with harsh medications - I feel lucky, not punished - there really is no reason...
  11. I agree with Prickly - stop all the supplements for at least a few days - until you are successfully getting food into you. When you feel stronger and are eating with no problem re-introduce them one at a time/no more than one a day - so you'll be able to identify if one sets you back.
  12. Great point IH! We have many guests over for completely gluten free dinners...in the beginning family were amazed that what they were eating was all gluten free, now they don't ask if it is gluten-free, they simple ask how to make it -- there is a gluten-free way to make all of your favorites, it just takes time to transition. One additional thing...
  13. If you don't have a fever, I'd guess it is gluten related. I've had "flu" like symptoms many times...sometimes just a few days, worst was several weeks. Rest, drink as much water as you can and eat any whole food your stomach can handle. Good old chicken broth soup with vegies is my go to when these "flu" symptoms hit. Hope you are feeling better...
  14. Wow Kitty - I read your original post - it is amazing that your doc won't test you. I happen to be one of the folks that gained weight with no explanation for years so I completely understand and have experienced the "you can't have celiac disease - you are not underweight" mentality. Can you change doctors? When you were grain free recently did you...
  15. Considering your hectic schedule since diagnosis along with very little follow up care - I am curious if you are aware of safe gluten-free practices - is it possible you are still ingesting small amounts of gluten? When gluten is remove the body often reacts strongly to small particles of gluten - shared toaster, colander, can opener, cutting board,...
  16. Welcome AfterAll! Yes, what you are feeling is completely natural. It is important to give yourself time to adjust. Time does makes it easier - time allows those around us to adjust, eventually your diet will not be the focus of conversation - the amount of time differs for everyone. While checking every label never ends it does become second nature...
  17. No worries...I really appreciate the thought
  18. I've actually seen this recipe and a few other similar ones -- patiently waiting until I get almonds back. It is quite funny - I was not a picky eater growing up but the one thing that I could not stand in baked goods was any form of coconut - for now it is the only flour I can use. I can eat banana but they kinda stop things up so I tweaked a similar...
  19. Oh...I can imagine...we've had our fair share of tweaking bread recipes over here...many fresh baked victories...just never got a loaf that tasted great a day or two after baking. Couldn't help myself - it's been over six months since I've had Udi's or any other decent gluten-free bread. Just recently I made a breadlike substance out of coconut flour...
  20. Sylvia's Gluten Free Bread Coming soon to a store near you
  21. If you are seeing improvement - I'd say you have found what you need to be eating. If you remain to improve or even have periods where nothing changes I see no reason to remove further foods. Should you get worse then it would be time to look for more food intolerance. If you find a food that bloats you, causes pain, makes you foggy or simply turns you...
  22. Should there come a time that you need a diagnosis/medical note I suggest you look for a gastroenterologist that specializes in Celiac Disease. Whether your daughter has Celiac Disease or Non-Celiac Gluten Intolerance (NCGI), they should be able to help you get the documentation you need. Personally, I think it is quite possible that your daughter...
  23. Welcome Kairyn! Your doctor was incorrect. The blood tests measure the antibodies produced in reaction to gluten ingestion. There is no way you would have antibodies to be measured at a year and half gluten-free. Do you feel better since you removed gluten? Are you sure you have removed all gluten? Do you have reactions to small amounts of accidental...
  24. First choice - Canyon Bakehouse Second Choice, easiest to find, lower price - Udi's Never, ever, ever, ever again - EnerG - only benefit to EnerG was it spurred us to learn to make our own. One day when we have an empty nest we'll go back to mostly homemade - for now Udi's wins.
  25. Absolutely - a great start. If you don't have luck at a bakery, you should be able to find Udi's breads and muffins at a store near you. Mushroom is right - some gluten-free bread tastes like drywall. Toasted or grilled cheese Udi's is probably the best easy to find solution. Also want to add -- gluten is often very sneaky in the way it effects...
