  1. Jason, I am so sorry that you continue to struggle. I can tell you from experience, I've been there and done that. Just a little about my journey, for some perspective: I am 43, and a single Mom, raising 2 boys 100% alone. Their father is not involved, both my parents died in the last 5 years, and my siblings are far away. 10 years ago, I got sick...
  2. TH, I am gonna let you experiment for awhile. It's starting to make me anxious, LOL Since you are a good baker, I will wait for your counsel before I try it again. Janie
  3. One thing I learned with my bout of b12 deficiency is that you have to take a LOT of it. I took 8000 mcg nightly, just before going to bed, and it took about a month to get it back to normal levels. This was after taking 2000 mcg for 2 months with no results. You can't really OD on B12 because the extra just comes out in your urine.
  4. I actually eat raw quite a bit. Virtually no processed food. I take 2 enzyme caps with every meal. I am thinking it might just take a while?
  5. Sue, ARRRGGGHHHHH! This is a vast left wing conspiracy to get me to give up my coffee, isn't it??? Why oh why oh why coffee? But seriously, thanks for the help. Peppermints are bad, huh? That's a bummer, too, I've started to enjoy them. OK, if anyone sees a crazy woman running around Orange County for the next week or so, don't worry! It's just...
  6. In the US, if modified food starch is from a wheat source, it must be labeled as such, ie, modifed food starch (wheat). It should be fine if it doesn't say wheat. On the main page of this site, there is a list of "safe" foods. It's a great resource!
  7. I am a daily visitor to Starbucks. The deal is that the "full service" Starbucks have the gluten free items, while those that are under the roof of another, like Target and grocery stores, do not. Also, the very small Starbucks do not have these items. If you visit a big Starbucks, in So Cal anyway, you can find them. The dried fruits and kind bars are...
  8. Not sure yet. I can't get on the scale, or I will die of depression I've been doing low protein since Thursday, along with HCL and enzymes with every meal. I certainly have had less gas, and don't feel like I am going to vomit after I eat, which was almost always the case after dinner, and it was usually heavy animal protien. I seem to be urinating...
  9. Based on the limited info you provided, my guess would be you have some secondary food intolerances. ARe you keeping a food diary? Also, are you taking enzymes and probiotics? These seem to aid in healing. Most Celiacs have secondary food intolerances, and thankfully, most of them go away after a period of keeping your diet free of those foods. Can...

ARCHIVED Gi Heals In 7-10 Days?

I am not a doctor, but I think he's full of beans. It can take MONTHS to heal the intestines, longer if there are other issues, like yeast, leaky gut, etc. Doctors like to think in black and white, and unfortunately, Celiac is not black and white. I've been gluten free for 7 months. While I feel tons better, there is still some healing going on (leaky...
  11. I will give it another shot tonight, with less water. Thanks!
  12. I think Rice Guy must be a mathmetician, with a minor in baking:) I am a great cook, just was never a baker. Now I am learning for my boy. I haven't tried Lorka, I will look it up. None of my loaves came out as bricks. Some of them sunk in the middle, but they were still absolutely delicious!
  13. Trillum Hunter, that is interesting. I have very little bread baking experience, but I volunteered to test out the recipes for Udi's. That was one thing I was concerned about, was that it is very goopy, and not like I remember my Mom's bread loooking like in the pan. What would you do to the recipe to get it to be like a dough? Less liquid? The best loaf...
  14. Well, the first loaf I used exactly what the recipe called for in water, and it fell. Third loaf of white was today, I used 3/4 tsp x gum, and a smidgen less than 3/4 cup water. The first two loaves I let rise to 60% and 75%, so this time, I let is rise to the top. I think my problem is I just suck at baking
  15. OK, loaf number 5 today. I did the white bread again, used a little less water than called for, let it rise to the top of the pan, baked at 350 for 35 minutes. It fell in the middle again It was however, delicious, and my son devoured the whole loaf. NOTE TO ALL: I am not an accomplished baker! I've tried the recipe with more egg whites and more...
  16. Angie, I am one of the few strange ones who never had bloating before going gluten free, I think it's because nothing stayed in me long enough to cause bloat. When I first went gluten-free, it took a while for my body to figure out how to process everything, and I literally looked 8 months preggers Now, if I get accidentally glutened or get cc, BOOM...
  17. French Meadow "flour" tortilas are deicious. They're just tiny, so you have to make lots of burritios Sonoma brand Ivory Teff Wraps are a close approximation of flour tortillas, and they're BIG. Mission brand corn tortillas have corn and water, and we eat them all the time without issue.
  18. Completely off topic, but can you please share your bread recipe? It's hard to find good ones!
  19. I have found that's one of the best things about being gluten free. The dishes I take to other places are always envied:)
  20. Breakfast Arrowhead Mills Rice and Shine Hot cereal with brown sugar, cinammon and blueberries Rice cakes with peanut butter and banana Lunch, Lettuce wraps or rice paper wrappers with almost anything inside: carrots, lettuce, sprouts, turkey, etc. Soups with chicken, carrots, onions, celery and turnips- yum. Add some quinoa curly veggie noodles...
  21. I will certainly give it a try. I am willing to do just about anything! This is almost debilitating, as I have at least 50-60 pounds of extra fluid. I took 3 HCL with a lunch of salad, with no ill effects. I just had another with a slice of bread. Keep a good thought for me that this works! Janie
  22. Doc didn't do a test, but said that based on lab results being alkaline. I get frequent heartburn. When I have taken the HCL in the past, it did not cause burning at all taking 2 capsules.
  23. High quality protein, and generous servings of peanut butter! Peanut butter has like 200cal in 2 tbsp. That's how my son got to a normal weight....lots of PB.
  24. You know, my doc told me about 2 months ago that he thought my body was very alkaline, and didn't think that too much acid was a problem. I've been on acid blockers for years because of heartburn. I bought some HCL a while back and used it for a few days then stopped. I have been off acid blockers for about a week, but am getting terrible heartburn. Do...
  25. I have had massive edema since going gluten free. Head to foot, non pitting edema. I estimate it's about 60 pounds and it's killing me. After 7 doctors, my Osteopath seems to think that the problem is that my body has not "re-learned" how to process protein, and it is leaking out into my cells, which is causing the edema. No drugs work. I've tried high...
