I had a very similar reaction to all gluten free grains. It was secondary intolerances that were temporary while my intestines were healing. Perhaps this is your problem, too? I couldn't tolerate any grains without a lot of pain and bloat. As for the problem with meats, maybe it is low stomach acid? I had that problem too. Just a thought. -
I found it to be very unsatisfying, very much like a frozen protein shake. I did not have any gluteny issues with it, just thought the taste was bleh.

Please, seek some help for yourself. Many say that Celiac disease is much like losing a loved one with the stages of grief and the sense of loss and depression that can come along with it. Yes, you have a lot to deal with. I can't say if you should give up your job or not, but I can say that therapy will help. If only to help put things in perspective... -

I did the probiotics and enzymes too, but I developed a lot of secondary food intolerances after going gluten free, as many people do. Yes! I was one of the "opposite" celiacs that never had bloating prior to dx and then BAM looked 10 months pregnant after. It was caused by secondary food intolerances, which I had a bunch of. If you are pursuing testing, you must stay on a full gluten diet. Do not eliminate gluten until you have completed the blood tests and/or endoscopy (which is what a GI will recommend), because it will effect the results. If you are not going to pursue testing, then go ahead and star the diet. -

Yes, I did before I was diagnosed. I was down to 97 pounds and I am 6 ft tall. Literally strangers would stop me on the street and tell me I needed to get help. Jackie, For the Heidelberg test, if the baking soda makes you burp, you probably do not have low acid. But I am not sure it is 100% accurate,. Do you have the symptoms in the link? If so, then get Betaine HCL capsules. Not tablets. Start with one with meals. Next meal take two, and so on, up to eight! If you feel burning with 2 or 3 or 4, etc. go... -

How is your stomach acid? I had the same problem: never stunk before gluten-free, only after Turns out I had low stomach acid and low enzymes. Now I take Betaine HCL before every meal and enzymes after. Any low acid symptoms? -

Since all the advice given here won't work for you and your daughter, I think it would be a good idea to stop giving ideas that will be shot down. IMHO, the real problem is that your daughter is being allowed to absolutely rule the house. Stock the house with food she is able to eat (note able, not willing) and then let her eat when she is hungry. ... -

I have to wait for a while to eat, too. At least an hour, and I've always been that way. My kids, on the other hand, would eat YESTERDAY if they could My little one (9) wakes up at 5-5:30 every day. First he says "good morning, Mommy," then "I am hungry" within 30 seconds. My 13 yr old is just hungry. Ask him how he is today, and the answer will be... -

OK, since you have the genes and symptoms, I would say you likely have it. The problem is that blood tests and biopsies can be false negative. The true test, IMHO is positive dietary response. You can have the biopsy, but remember that there are over 35 ft of intestine, and they only test 6 samples. So, it could be negative, too, even with Celiac. Or... -

My favorite pastas are Ancient Harvest Quinoa pasta. It comes in like 8 varieties. they're all great, and quinoa is really good for you. It's a "perfect protein." -

I agree with CeliacMom. I think sometimes, we just take ourselves too seriously. Should they stop being jerky and try to accomodate you because they're decent human beings? My older son had issues with C when he was as baby. He was prescribed Lactulose. It was very gentle and effective. Have you considered drinking a lot more water? That seems to relieve C in some.
