One person was a healthcare professional; supposedly gluten-intolerant and has symptoms when she eats wheat. She even volunteered an opinion on a gluten-free baking mix.   6. How about giving up any type of bread-like product for a weekend and see how you feel? For breakfast, you could have eggs or fruit with yogurt. Sounds like some hidden cross-contamination somewhere. Maybe toothpaste, mouthwash, or lip balm/lipstick products are not 100% gluten-free?
  7. This isn't a mix but pretty easy to make if you can have pumpkin and eggs. How about this? Mock Chocolate Cake 1/4 c. canned pumpkin 2 TBSP cocoa powder 1 egg white 2 pkts sugar (or sweetener of choice) 2 drops of vanilla extract pinch salt Blend all ingredients together, put in a coffee mug & nuke in microwave for 90 seconds. ...
  8. How do you prepare the sunshine burger? I've never tried them but they sound good. Our dinner is in the crockpot: lamb shanks/potatoes/carrots/celery/carmelized onions cooking with merlot & chicken stock. Will add chunks of sweet potato later (so they don't melt).
  9. I've used tapioca flour in a blend with Authentic Brand fine brown rice flour to make awesome cupcakes (recipe on gluten-free goddess blog). I think you can find tapioca starch in Asian stores at a pretty reasonable price. P.S. Great picture!
  10. Well, my husband's allergy tests showed that he is highly allergic or intolerant to caffeine. I had never heard of that before his test results. He's avoided caffeine since as well as a myriad of other foods so it's not clear how the caffeine affects him. His skin conditions are/were the indicator for the gluten intolerance.   11. Everything sounds wonderful. Does the Braised Lamb Shanks use any tomato products? Dinner tonight is cooking in the crockpot. It's a chicken stew using boneless chicken thighs, mushrooms, red potatoes, sweet potato, onions, carrots, celery, chicken stock seasoned with fresh rosemary, salt&pepper.
  12. Breakfast burrito made with a brown rice tortilla filled with scrambled eggs, shredded cheese, steamed bok choy, & diced turkey bacon.
  13. Can also scramble some eggs/cheese/meat/veggies & roll it up in corn tortillas.
  14. FYI, it's possible to be allergic or intolerant to the yolk only or the egg white only.
  15. Happy Anniversary! We celebrated our 12th anniversary tonight with turkey kale soup, mixed green salad, marinated chicken thighs (oregano, garlic powder, evoo, lemon juice), sweet potato fries, brown basmati rice, and gluten-free chocolate chip walnut brownies.

Real Simple magazine had a really simple and tasty blueberry jam recipe that only has 4 ingredients and NO pectin or gelatin: Open Original Shared Link Although I did start off with half of the sugar called for in the recipe & it tasted sweet enough for us. We put it on brown rice cakes or stirred into plain yogurt for a nice snack.
  17. I've had to minimize eating any Hershey's candy products because they seem to make me breakout in whiteheads. If I eat a serving of their products 3 days in a row, I break out. I could never figure out what it was because there wasn't anything unusual in the ingredients. European chocolates don't affect me the same way.

  19. Plain yogurt. We're trying right now. I made a batch of plain yogurt and let it sit for 24 hours to break down all the lactose. DH was really missing the probiotics. I'm really hoping it works for his sake. We eat rice yogurt but it'd be nice to have something less processed.

  23. I found the small cups on an endcap, same refrigerated unit but opposite side of where the large tubs were located. Maybe the brand has to pay for product placement hence the moving around? It would make more sense to place the small versions with the large tubs since they're the same brand but that's just me. Good luck finding them!
  24. Thanks! I am in Southern Calif. and will look in those areas of the store. That is one complaint I have about Costco is that they move stuff around and the aisles aren't labeled (at least the stores down here).
