  1. It comes from the collagen inside animal bones and connective tissues. So yes, if you have an issue with eating animal parts, you probably wouldn't want to ingest gelatin. Obviously, it affects those with a religious bent about eating animals, as well. But I don't have any of that personally, so I'll be trying out this recipe -- thanks!!

  3. It depends on what kind of recipe. Tuna salad, chicken salad, egg salad. I used to love to make tuna casserole -- make tuna fish salad with mayo, and add pasta and peas, carrots, etc. Very tasty. If you do a google search, you may be able to find some ideas, too. I can't say I use mayo much, so those are the only ones that come to mind.

  5. Thanks for your encouraging thoughts!:>)! I can handle being gluten-free okay. That's the easy part. It's the other debilitating symptoms that developed that are so difficult. You would not believe what happened to me. Plus,I couldn't sleep well for over 2 years...it's getting better. (It's the pain that wakes me up.) I'll get there; just having a downer day. Thanks ...

  8. K8ling is right -- but she may not know what it even feels like to feel good yet. I had no clue that people didn't feel like I always did. So she doesn't even know she is headed for yet. If only there was a way to let her have the experience of feeling decent so she knew what she was working towards....

  12. They might actually be referring to their menu. I've had several restaurants locally who said they were "mostly" gluten-free, and then proceeded to explain it in reference to their menu.

  16. Gluten intolerance is the allergy form, I believe, and Celiac's disease is an autoimmune disease. Someone PLEASE correct me if I'm wrong.

    I had several emotional meltdowns in the beginning because I felt like everything had to be from scratch and really complicated. Since that has since been disproven it's all good. Give yourself time. It does get easier.
  18. Dang, Nancy -- what bread is that?! Udi's and Katz's will get very toasted. I'm going to try Ener-G in the future, as I hear it is awful for regular bread substitute (Udi's and Katz are my FAVORITE) but this isn't the first time I've heard it is good for breading. You guys are awesome. <3
  19. I've eaten them regularly and intermittently. I use Bob's Red Mill Gluten Free Oats, and I've never had a problem. I have Celiac's Disease (not gluten intolerance or anything otherwise.) Hope that is helpful!

  21. No, I'm wondering if you could use a different flour all together. We don't have many bean flour sources around here, and they are a bit pricey when you do find them. I have teff and amaranth at home. So I was wondering if you've ever subbed or not.
  22. You are not alone. I have done things like that before -- licked my finger after making the kids sandwiches, and such. There is a really great recipe for brownies on here....I wish I could remember the post. But you message me, I'll send it when I get home (the message will remind me!). It is excellent, and NO ONE will know it's gluten free. It is amazing...
  23. Hamburger buns: Katz Challah rolls. These things are awesome. WAY better than average rolls. I'm not a fan of Kinnikinnich unless that is my only choice. The taste is good, but the texture is funky, to my taste. I don't think Larabars have dairy in them, actually. Nuts and fruit-based are the only ones I've had.
