ARCHIVED Coping With Watching Others Eat
ciavyn replied to BrownEyedGirl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think it affects everyone differently. Outside of really good, home made rolls and breads, I never was much for bready items. I ate cake because someone made it, or it was a birthday party, etc...did I need cake? NO. Did I end up eating ice cream too, because I'd rather have that? Yeppers. So perhaps take stock of what you ate because it was the social... -
ARCHIVED Eating Like A Horse!
ciavyn replied to The Glutenator's topic in Coping with Celiac Disease
If you are able to start some light exercise (or continue, if you already are) you should be fine. I eat like a horse, too, and I think it's because I'm so active...but I also don't gain weight at this point. Which I'll take... -
ARCHIVED Gluten Free White Chocalate? Cheesecake?
ciavyn replied to dreemer406's topic in Gluten-Free Recipes & Cooking Tips
Jen -- I've not had a problem with the nuts in the store. Keep in mind that often these CYA statements are just that -- CYA. Many, many products are made on the same lines. Some people are VERY sensitive, and others aren't. So you'll have to decide as you go what you want to risk. -
I'm going to third, or fourth what everyone else said. I did the one meal a day thing in high school, and I couldn't lose weight no matter what I did. In fact, I gained weight. When I finally followed a regular diet and exercise plan, I dropped pounds quickly (I won't mention all the unhealthy things I did...:sigh:) but nonetheless, I've managed to keep that...

ARCHIVED Gluten Free White Chocalate? Cheesecake?
ciavyn replied to dreemer406's topic in Gluten-Free Recipes & Cooking Tips
Wow -- that is interesting, and I'm definitely going to try it. Sounds lovely. Incidentally, if you add some flour to that almond crust mixture and brown sugar instead of white, it turns out very much like a graham crust...and super yummy. -
Natural flavoring and spices is often suspect, though I've not had any issues. It has only been four days, so sometimes the body is reacting to everything, without explanation. I had off and on issues for the first month or so, before it smoothed out, and every now and again, something that shouldn't have bothered me will, and I have a nasty reaction. Give...

Good to know, and thank you for the recipe! -
ARCHIVED Gluten Free White Chocalate? Cheesecake?
ciavyn replied to dreemer406's topic in Gluten-Free Recipes & Cooking Tips
Unless it has cookie crumbs or something in it, you should be fine. I love white chocolate and eat it regularly. There is a great recipe on here for graham crackers crusts, if you do a search -- it is super yummy. And Cheesecake sounds like a fun dessert for a birthday. Let us know how it turns out. -
ARCHIVED Ener-G Brown Rice Loaf

Where did you pick up that crust, and would you be able to share the recipe for the garlic butter? I always struggle with stuff like that. -
ARCHIVED Eating Out
ciavyn replied to masterjen's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Go with your gut...no pun intended! I eat out about once a week, and I pick my locations carefully. If someone refers to me to a place because they are gluten free as well, or a restaurant advertises gluten free, chances are, they know what it entails. Restaurant owners and managers are not stupid when it comes to the risk of stating gluten free. That's... -
ARCHIVED Eating Like A Horse!
ciavyn replied to The Glutenator's topic in Coping with Celiac Disease
Me too! I've been gluten-free for six months, and I'm ALWAYS hungry. I am training for a half-marathon, so logically I'm going to be hungry, but I'm famished constantly. And it's real hunger, not emotional munching craving. Very frustrating. -
ARCHIVED Gatorade- The Final Verdict!
ciavyn replied to azagave's topic in Gluten-Free Foods, Products, Shopping & Medications
I drink Gatorade whenever I'm on a run, and I have never had a problem. That being said, I don't classify myself as uber-sensitive. So it may depend on where you fall...but I think you'll find that same answer with any corn-sourced modified food starch. -
I travel several times a year. Here's what works for me: I take whatever gluten free staples that can be eaten cold or microwaved: soups, packets of beans (check the mexican aisle) sandwiches, frozen gluten free meals, veggies, fruit, cheese, potatoes, sweet potatoes, etc. Whatever you enjoy. Make yourself some stuff a head of time if need be. Ignore difficult...

ARCHIVED Buying A Stand Mixer
ciavyn replied to MartialArtist's topic in Gluten-Free Recipes & Cooking Tips
A kitchen aid stand mixer should do the job. I have a home model, but the $300 one that i bought on ebay for $80 four years ago. Wow, is that thing awesome!! Love it, love it, love it! Check out craigslist and ebay if you want to get a steal. I've never had any problem with the attachments or cross contamination -- just washed everything in super hot water... -
Same thing here. But with all the food issues I have and everything else I've given up, I'm not giving up chocolate or caffeine. I try to moderate my intake, so as to keep it at normal levels. But give them up? Not on this side of icicles in H-E-double-hockey-sticks.

For the squeamish, I prefer the raw chicken example. Anyone who cooks anything has probably handled raw chicken (barring the vegetarians among us) and understands the importance of handling chicken very carefully and cleaning up afterwards. That is the way I view gluten. It can come into my house, but it stays in a separate container, and away from other...

ARCHIVED Ener-G Brown Rice Loaf
ciavyn replied to sa1937's topic in Gluten-Free Recipes & Cooking Tips
Yo, my PA peeps...Wegman's has all sorts of bread options, and the Healthy Grocer in Camp Hill, PA (about an hour from chambersburg) has Udi's bread now...and believe you me, it's worth the drive. I just finished my deli chicken, miracle whip, and white Udi bread sandwich. Yummy. not to mention: grilled cheese. Just savor that one from a moment. Ah.... ... -
ARCHIVED Udi's Bread
ciavyn replied to DMarie's topic in Gluten-Free Foods, Products, Shopping & Medications
Ooo, that is good to know. I haven't tried it yet because the price is high and I didn't have any recommendations from others. I'll pick it up the next time I'm at the store! -
ARCHIVED Grocery Staples?
ciavyn replied to BrownEyedGirl's topic in Gluten-Free Foods, Products, Shopping & Medications
If you follow something close to the phase 1 and 2 of the south beach diet, you'll be darn close. Potatoes, corn chips, check out the gluten free aisle of your nearest grocery/health store. Here's my story on baking: I've gotten very, very lucky. Pretty much everything I've made has been yummy. I bought Tom Sawyer's flour mix (it was between that and... -
ARCHIVED Confused! Positive Blood Test For Celiac's
ciavyn replied to nichol's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I probably should keep my trap shut, because I don't have all the medical stuff on celiac's down yet...but I would recommend exercising and eating sensibly, regardless of what else you may have read. Exercise is good for so many body processes, and as someone who has a hard time regulating her weight, I totally understand your frustration. I'm small, but... -
ARCHIVED Has Anyone Been Told They Have "mild Or Early" Celiac?
ciavyn replied to DebbieM's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I read this earlier, but wanted to wait and see what someone else said. My opinion: that's what we call celiac disease and a resistant doctor. Good god. I wouldn't continue down that path if I were you. Then again, I have to work with people, so gluten and I are a bad combo in small spaces! But I'd be darned if I'd continue to live like that. Best of luck... -
ARCHIVED Gluten Free/dairy Free Sour Cream?
ciavyn replied to Lycopene's topic in Gluten-Free Foods, Products, Shopping & Medications
Hm...good to know. Lyco -- are you new to the gluten-free diet? I didn't have sour cream for the first four months, but now I can have it without too much issue. I'm back to eating cheese, too. Again, took about four months, but now i feel much better on it. My point: over time, you can probably have it again, if you are willing to give it up for just... -
ARCHIVED Udi's Bread
ciavyn replied to DMarie's topic in Gluten-Free Foods, Products, Shopping & Medications
Amen! That is the same thing I did my first day: two grilled cheese. Two PB and J the next day (and I shouldn't have PB, so I was miserable for part of the day...but it was SO worth it...then I went back to almond butter). Love the blueberry muffins...I nuke 'em for 30 seconds and they fall out of the plastic and yum... -
I can't suggest anything yet because I haven't run mine, but I'm fundraising for the San Diego Rock N Roll half marathon! Very cool to see another TNT member on here!! Best of luck -- fundraising is tough. I have $1400 left to go and am trying to come up with ideas...I'm thinking hitting up local businesses isn't a bad idea!
