I think you need to get copies of those tests and see what was really positive, I have seen docs thinking odd things mean someone is eating gluten. -

Nate- I don't think I would worry about rare things like flouride intolerance right yet. Sounds like the doc is eliminating the obvious problem first - problems with Celiac and the gluten-free diet. See what the scope says and the urologist. Get that info and take care of the issues they find. Then you can see if you need to look into more obscure problems... -

I have never seen any peanuts sticking together. So why? Plus, wheat flour isn't really good for that. It gets sticky when moist. -

It is a bit confusing because you keep asking the same question in 3 or 4 different places. I think I said before that you might be sensitive to an ingredient? Maybe your baking tools ( sheets, etc) had left- over gluten, etc. If you think you are a " super sensitive" you want to stop eating any of these processed foods. Perhaps even eat only foods... -

I do that. I say the doctors at The Univ of Chicago Medical Center Celiac Center say " insert what you want them to know here". People think they are my doctors and I just let them think so. They have lots of advice on their website, so they are sort of our doctors.

It's not saying there is 20 ppm in them. They don't add gluten to get to an amount. The test is less than 20 ppm. It could be 19 or 1 or 0. I didn't see anything about what level they test, but its at least 20 as they are made in Canada. There are a lot of ingredients, they have Xantham gum. What I don't think you are understanding is, if soy sauce has wheat in it , it will list it. For example - salad dressing - ingredients - olive oil, soy sauce ( soy, wheat, salt), onion, spices. I think that Celiac takes a while to appear. You have to make antibodies and then they have to have time to destroy the small intestine enough that it starts to bother you. I would think this would take at least a month, probably more. Just my guess. For most people, it appears it was a gradual decline over many months or years. -

That is why you read the ingredients on everything you buy. Wheat must be labelled. I have never seen it injected in meat. Modified food starch is corn unless specified otherwise. These are just US laws. In the US, most sausages don't have bread fillers - a few do, so read the ingredients. Bread fillers in sausages are more common in Canada and the... -
I don't understand the choice of eat gluten or starve. You know you will be wanting to eat, so you can bring something. Keep a packet of nuts or a gluten-free granola or protein style bar with you, always. If the choice is to eat rat poison or starve, which would you chose? Looks like, depending on how the rule is interpreted but.....there will be no more gluten free menus in restaurants . They can't test every food they serve, so this may mess things up for the good gluten-free menus. However, the FDA doesn't exactly regulate them...so who knows. -

Have you asked the hotel about a fridge? Many have them for people with a medical need. They aren't supposed to ask what the nature of the medical issue is. Call and ask about the hotel store or any stores nearby that might sell food items like a Quick Trip or grocery. gluten-free beef jerky. WF has shelf stable pepperoni I think is gluten-free. ... -

In the US & Canada, labeling laws would require the wheat to be listed on tomato purée. Corn starch is safe for Celiacs unless you have an additional issue with corn. If wheat is used to thicken a food, it must be listed.
