  7. Proper blood testing consists of multiple tests. One or more tests are done looking for antibodies specific to gluten, combined with a total serum iga test. The latter test must be "normal" for the results of the antibody tests to be valid. The antibody tests vary in sensitivity and specificity, but they all depend on the antibodies being currently produced...
  8. It's gluten-free. Lipton is a Unilever brand so any gluten ingredient will be clearly named in the ingredient list.
  9. In Canada, the word "spices" in an ingredient list can not be used to disguise grain products. "Spices" refers to individual spices such as allspice, cinnamon, and cloves, etc., and herbs such as thyme, sage, savory, etc. Flours and starches are not spices and can not be labeled as spices.

    I have heard this tale about wine many times, but have never found any credible evidence that wine contains gluten. I drink wine without any reservations.
  11. Seasonings could contain almost anything, including wheat flour. Spices do not include anything that contains gluten. Gluten grains are not spices, and can not be labeled as spices.
  12. Sugar is not an issue with respect to the gluten-free diet. Many of us avoid sugar for other reasons. I have diabetes as well as celiac. Chocolate may be sweetened with barley malt, which is a source of gluten. You need to read the ingredients carefully looking for malt, malt extract, or barley malt. If you see any of those, do not eat the chocolate.

  14. I have never worried about colours. I try to buy from the companies with a clear disclosure policy. But, based on Shelley's advice, I don't worry about flavours. In theory, barley malt could be listed as natural flavour, but companies don't do that because it is a relatively expensive flavour so they want you to know that it is in there.

  16. There are ingredients that are always gluten-free, for example "corn starch." There are ingredients that always contain gluten, such as "barley malt." And there are many ingredients in which gluten can be hidden. It is possible for gluten to hide in flavoring, but it almost never does.   17. My nails were like that for years, but since starting the gluten-free diet, they have become normal. Just one more way the malabsorbtion caused by celiac disease affected me.
  18. Yes, the fries at McDonalds in Canada are gluten-free. They are not coated in anything. They are fried in dedicated fryers which fry only potatoes. I eat them from time to time and have no issues.

  23. Regarding the tTg, no test is perfect. While the test is quite specific, a low value does not necessarily mean that antibodies are present, just that the test is not 100% specific and accurate. Even with no antibodies present, some reaction is normal.
