If the prescribed practices are followed, there is no direct contact with food by the front crew; they only touch the container or wrapper that the food is in. All contact with the actual food is made with stainless steel utensils. -

In both Canada and the US, maltodextrin must be made from corn unless otherwise disclosed. If you see maltodextrin on a Canadian or American product, without a notation that it is made from wheat, it is made from corn and is gluten-free. A couple I like and use regularly are Kraft French and Kraft Golden Italian. Most Kraft dressings are gluten-free, I am only aware of a couple that aren't, and with Kraft you know that if there is a gluten source it will be clearly disclosed in the ingredient list. -

Well, the amount of gluten is a lot less than if you had eaten some regular bread or a slice of ordinary pizza. If you only swallowed a little, things may not be too bad. Unfortunately, it could also send this message: If you have a gluten-free list, menu, label, etcetera it may attract a potential lawsuit. If you don't want the hassle, just tell them that there is wheat in everything, even if there isn't, just to be safe.

What is the source of the information that the supplier claims that frying removes the gluten? I haven't been able to find a statement from McDonalds to that effect. McDonalds has not said what process removes the gluten. Some folks on here have said the claim relates to frying or parfrying. The doctor quoted in the article mentions distillation. McDonalds...

Okay, the doctor in question said: McDonalds has not said how the gluten is supposedly removed. It is generally accepted that distillate does not contain gluten. So, is there distillation as part of the process? I really wish McDonalds themselves would issue a statement which clearly says what the process is and what evidence supports their claim...

Brewer's yeast is rare in food, and if present will not be disguised simply as yeast. According the the Canadian Celiac Association 2005 ingredient information, it is not allowed because "current methods of testing cannot accurately confirm the amount of residual gluten in brewer's yeast." Altoids do not contain brewer's yeast, or any other gluten source... -
