I have no problems with products from shared facilities. Most are, even if they don't say so (the disclosure is voluntary). Is your house 100% gluten-free? If not, then you live in a shared facility. -

Welcome! Genetic testing is not the same as antibody testing. The gene test looks for markers that are associated with celiac disease. Two are typically checked for--DQ2 and DQ8--although there is growing evidence that others may be associated. Many people carry the genes without ever developing celiac disease. Marsh 2 says your villi are affected. Marsh 2 indicates a level of damage not severe enough for some doctors to call it celiac disease, although many enlightened ones will. -

Do not switch to the gluten-free diet until ALL testing has been completed. If you do go gluten-free, false negative test results are possible. -

Red Bridge is made by Anheuser-Busch. I don't know about their facilities, but I have not had a problem with it. Bard's is made in a dedicated facility. While there are a few ugly cases in the dozen years I have been doing this, I have found that the majority of restaurants listen and at least try to meet my needs. From my observation reading here for the past 8+ years, 100% of ALL Enterolab results report positive for gluten intolerance. Send Dr Fine your stool sample; he'll report back that you have an issue with gluten, while happily cashing your check. Modified food starch is usually tapioca or corn. If it was wheat--which I have never seen to be the case in North America--it would have to be stated as such using the word "wheat." Some very old lists contain it since prior to 2006 it could be undisclosed wheat. It is no longer a concern. -

Whether two slices a day for four weeks is enough is debatable. But you don't have to eat them plain--just eat them. French toast or sandwiches are fine. And it does not specifically have to be bread. Rolls, bagels, pizza crusts all work, as does ordinary wheat pasta. -
