  1. I have no problems with products from shared facilities. Most are, even if they don't say so (the disclosure is voluntary). Is your house 100% gluten-free? If not, then you live in a shared facility.

  9. Do not switch to the gluten-free diet until ALL testing has been completed. If you do go gluten-free, false negative test results are possible.

While there are a few ugly cases in the dozen years I have been doing this, I have found that the majority of restaurants listen and at least try to meet my needs.   17. From my observation reading here for the past 8+ years, 100% of ALL Enterolab results report positive for gluten intolerance. Send Dr Fine your stool sample; he'll report back that you have an issue with gluten, while happily cashing your check.   18. Modified food starch is usually tapioca or corn. If it was wheat--which I have never seen to be the case in North America--it would have to be stated as such using the word "wheat." Some very old lists contain it since prior to 2006 it could be undisclosed wheat. It is no longer a concern.

  20. Whether two slices a day for four weeks is enough is debatable. But you don't have to eat them plain--just eat them. French toast or sandwiches are fine. And it does not specifically have to be bread. Rolls, bagels, pizza crusts all work, as does ordinary wheat pasta.
