  1. As far as health problems go, it's not too bad. At least diet treats it. I don't feel like I'm missing out on anything important in life now that I'm gluten-free. If I could snap my fingers and not be celiac, I definitely would.
  2. I am a little confused as to why your normal doctor cannot order bloodwork. It does not require a specialist to order a basic celiac panel. I'd suggest you contact your doctor, tell him/her you want to go gluten-free, and ask for a celiac panel right away so you can start the diet.
  3. Have you looked at the gummy vitamins? They're a pretty good alternative for picky kids and I'm pretty sure I saw some that were gluten-free. My nephews are really picky and that's about the best way to get vitamins into them.
  4. There is a need for gluten-free oats, and ever since Tricia Thompson came out with that cross-contamination study, I have started buying my grains from Bob's Red Mill. Bob's states that everything they label gluten-free is batch tested and made in their gluten-free facility, which gives me some measure of comfort. It would be really upsetting if new legislation...
  5. Ow, ow, ow. That's a migraine for me. Nice you can quit cold turkey. Some of us aren't so lucky.
  6. Modified food starch gives the salsa a consistency that sticks to your genetically modified, canola oil fried corn chips better. And yes, in the US if modified food starch is made of wheat it has to be declared on the label.
  7. I don't know how much gluten you would get from nail polish. We have had board members who didn't have their TTG fall until they stopped eating processed "gluten-free" foods and switched to eating only whole foods they cooked themselves. Most companies making gluten-free breads, pastas, and cookies keep their products below 20 ppm but that may be too high...
  8. Wheat sure gives me a stomach-ache. It's a dull ache that used to have me curled up with a heating pad and thinking I had a virus or something. I'd use exactly the words your son does. "My stomach hurts." It's not something I would confuse with hunger, and I wasn't generally nauseous. I was diagnosed with gastritis at one point when the pain wouldn't...
  9. It is possible for your thyroid to function better gluten free if you're borderline. Sometimes the issue is being unable to absorb enough iodine. I agree you need a new doctor, and that seeing an endocrinologist is a good idea.
  10. Add a lawyer into the mix and it really becomes messy.
  11. Sampling in general is a surprisingly complex issue. Do you test by the batch, if so, at the start or end? Do you test ingredients or finished product? How many tests do you need? How homogeneous is your food? Will one test catch traces of contamination somewhere else in a 500 unit run? Legislators have to deal with this. Take the example of someone...
  12. Before you start thinking Vitamin Water is healthy, have a look at this article. A Federal judge ruled that the health claims on Vitamin Water were misleading. The stuff is basically sugarwater with a trace of vitamins as a marketing ploy. Open Original Shared Link If you want vitamins, get a good multivitamin and mineral supplement, or eat nutrient...
  13. Many celiacs do not tolerate the 200 ppm codex wheat starch and Europe is looking at revising their gluten-free standard down to 20 ppm. 200 ppm was historically chosen because of the accuracy of tests, not for safety. Recent studies on refractory celiac suggest that there is still too much residual gluten in so-called gluten-free foods for some celiacs...
  14. I have a breadmaker and I can make good fresh bread, but mine doesn't make the French bread crust right even with wheat. I loved the fresh baked baguettes in France, and I'm after the real deal. Long, thin bread, with a chewy, shiny crust and that fluffy, holey inside that's so soft it's hard to even butter. Even if I do a French style bread with wheat...
  15. Random days when you feel what you currently think is OK are common. Many celiacs feel so much better off gluten that they realize their OK days were actually still sort of sick. Yes, celiac could easily explain your symptoms. Do get tested. It's good to know whether you are celiac, or just one of the millions of people who gets sick from gluten. The...
  16. Well, someone must like it for the stuff to be everywhere. Count me out! I usually make cornbread stuffing.
  17. After seeing dirt and bits of stems rinsed off some brands of rice, I always rinse it well. I do buy a lot of imported rice as well as domestic, like red rices and black rice, so this may be why I tend to find more dirt and whatnot. California rice is usually pretty clean.
  18. Taper the caffeine BEFORE you start the elimination. Another way to do it is gradually cut the amount of caffeinated coffee in your mochas in the morning. Then challenge tea first.
  19. Old-fashioned Cornbread 2 c cornmeal 1 tsp baking soda 1/2 tsp salt 1 Tbsp sugar or honey 2 eggs 2 c fresh buttermilk 2 Tbsp butter Heat oven to 450 degrees. Melt butter in 9x9 pan or cast iron skillet. Mix dry ingredients. Add eggs and buttermilk and mix. Swirl the melted butter in the pan to grease it and then pour the melted butter into the...
  20. Fresh, crusty French bread. Anyone know how to get that French bread crust and the fluffy inside gluten-free? My cornbread recipes have not changed. I make spoonbread or an old-fashioned buttermilk cornbread. Need a recipe, Rowena, or are you still off of dairy?
  21. Been there, done that. My elimination diet was incredibly helpful and if you have the discipline, go for it! I did lamb, rice, lettuce for two weeks with nothing but water to drink. For the first time in my life my stomach stopped hurting and I went two weeks without D. I did have to wean myself off coffee because I get headaches if I quit cold turkey...
  22. Hi, Revenant. Yes, recovery centers exist, as do addiction help programs. 12-step programs are your best bet, as they are extremely powerful and easy to find. You can get very good support in some of those groups. Ravenwooodglass and I already suggested AA in your other thread. If you prefer not to follow the alcohol direction, FAA might be helpful instead...
  23. I'm really glad you didn't get too sick. Hopefully the brain fog will clear up quickly for you!
  24. Gluten intolerance can do a lot of things. It's an absolutely reasonable thing to try cutting it from your diet. I'd also suggest eliminating dairy and soy, as a lot of celiacs cross-react to them from leaky gut issues. That will still give you a lot more foods than lamb and potatoes and you can try adding them back if you end up feeling better.
  25. Figuring out I was celiac changed my life too. I understand your hopefulness completely. And if you get negative test results, don't sweat it. Get off the gluten and don't look back. The tests have at least a 20% false negative rate and doctors don't know how severe gluten intolerance can be.
