  1. You're so great to want to be understanding. I think everyone has given good advice about what foods to try to cook for her, or where to take her for gluten free restaruant food, but I also think it might help if you planned some dates that did not involve food at all. Show her that you want to spend time with her and that the food thing isn't important...
  2. I have been having breathing problems for years. Last month I got brochitus really bad and it's not going away. I have had shortness of breath and chest pain whenever I do anything for the past month. They took a chest x-ray and I have some spots on my lungs. I have to see a Pulmonologist next week. I'll try to update if I find out what this is. I had...
  3. Lundberg makes some Gluten free risoto mixes. I don't know if they have a chicken flavor though.
  4. Soy gives me joint pain as well. OP should check to see if the gluten-free items have soy in them. Many gluten-free subs do use soy.
  5. I have not had those products, but I have tried many of Trader Joe's Products without a problem and I'm super sensitive to CC. I've had Trader Joes corn crackers, gluten free pancake mix, brown rice pasta, and corn tortillas. Everything was good and reasonably priced. I like Trader Joe's a lot.
  6. I have yet to have a problem with canned foods that have single ingredients such as tomatoes or just chilies. I figure the more ingredients in the product the more likely cc could have occured. I avoid most things with long ingredient lists. It does get easier the longer you do this. You learn what brands you can trust. The problem is that "Gluten free...
  7. Hi Kim, I beleive the reason the doctors are telling you that you will gain weight is that your current BMI is considered underweight. While you are not super underweight right now, 112 would be in the normal BMI range and a healthy weight for you. As the other posters said, please don't try to obsess about your weight. Instead focus on being healthy...
  8. I don't know if the Mccormick perfect pinch seasonings are gluten free or not, but I can tell you from my past expeience they have NO FLAVOR whatsoever (IMO). If you are trying to cut out salt you would be better off just mixing up you own blends from single spices you know are safe. Here are some seasoning mix recipes for you to try: Open Original...
  9. You've got a GREAT doctor there! It's rare to find one that will admit they don't have all the answers....Hold onto her!
  10. I think it really depnds on how long you were sick, how much damage your body has to overcome and how well you transition to being gluten free without getting acidental gluten. I know for me I was very sick for about three years, I had three miscarriages during that time that I blame on gluten and it took me about 6 months of eating gluten free before I...
  11. Sorry you're having a tough time. Here are some suggestions for non-food-centric dates: Make your own gluten free picnic lunch and go eat in a park. Go dancing/take dance classes together. Go to a museum/musical/movie/aquarium/zoo/botanical garden/plantarium Go hiking/biking/swimming/rock climbing Go canoing/kayaking/white water rafting (bring your...
  12. I'm not an expert on the tests, but I have never heard anything like this before in all the posts I have read here. I'm really curious what his basis is for labeling you gluten intolerant versus celiac. You really should get a copy of your test results to read for yourself. Regardless of the label, however, the same strict gluten free diet needs to be...
  13. Since eating there is a regular event, I think I would cope by not having them cook for me at all for a while. If they are willing to give you some freezer space, you could make up several Gluten Free freezer meals at home, and take them there. That way when you are there they can just pull your meal out to reheat for you. It's not the same as having something...
  14. I agree it wouldn't hurt to try to talk tothe chef directly. Someone just workign the front desk may have misunderstood what you meant by "separate" pans and cooking surfaces. You are not asking for them to buy a brand new pan and only use it for your food, you are asking for them to clean the surfaces prior to preparing your food and and prevent cross...
  15. Oh, sorry I did not read your siganture. My suggestions were based of a Gluten free Soy Free and Dairy Free diet which you mentioned in your post. Grain free, egg free and nut free is harder, but it shouldn't be impossible. You just may have to plan ahead a lot more. Plain chicken can be cooked in a microwave if you really have to. Take a glass pyrex...
  16. Get a room with a fridge and microwave first of all. Bring as many gluten-free snacks as you can and some things that are easy to cook in the microwave in the room. Secondly, is this just for breakfast or are you eating all your meals at this hotel? Breakfast is usually easy for me if the hotel has a good buffet. I get a couple hard boiled eggs still in...
  17. Have you have your gallbladder function checked? People without gallbladders or non-functioning gallbladders have trouble digesting fatty foods. If you were undiagnosed for a long time the gluten may have over-taxed your gallbladder. I had my gallbladder removed right around the time my health started to decline. I suspect it might have been the start...
  18. My reaction to soy is mostly different, with some overlapping symptoms. Clear as mud? lol. With gluten I have neuro reactions AND digestive reactions. With Soy I have all of the neuro reactions but fewer of the digestive reactions. The reactions also tends to depend on what form the soy is in for me. I can't handle soy flour or eddamame at all (will...
  19. I avoid anything labeled "made on shared equipment" or "may contain wheat". I am very sensitive. I will react to something that has added gluten, but the amount of gluten or the processing makes the product test at levels that are considered "gluten free". One example of this is McDonald's fries--they actually use wheat in the processing, but when they...
  20. It's just my opinion, but it's really no one's business how you were diagnosed. You are not saying you have celiac to commit some kind of medical fraud. The food has to be prepared the same whether you are celiac or gluten intolerant. And even though I'm self diagnosed I don't consider myself to be lying if I tell someone I'm a celiac. I really beleive...
  21. Have you contacted the place to know for sure that they can't make anything safe? You might be surprised, the nicer the restaurant the better chance that they will be able to accomodate you if you talk to the chef ahead of time. If that doesn't work then I would eat ahead of time and order a fancy gluten free drink to toast to your dad's success.
  22. Are you in need of a doctor's note to convince your family, your employer or some other reason like to get a tax break? If not then I say skip it. You are sure and you have no intention of touching gluten again. It sounds like this doctor just wants to be able to bill you/your insurance for another procedure (assuming you are in the US). I would find...
  23. I wonder if he could be reacting to the yeast or leavening/cultures (in the biscuits the buttermilk cultures are similar to yeast cultures I beleive)? When I first did my elimination diet I reacted with bloating and stomach pain to anything with yeast. I have since found I can tolerate yeast products sometimes but I still bloat a little so I avoid them...
  24. I am self diagnosed but I will use the term celiac or allergy depending on the situation. If I am just in a restaurant and need to explain for food prep I will use the word allergy because I find people take that more seriously and it is easier to explain. When I have to explain to people that invite me to eat at their home or offer me food I tell them...
