  1. I love adding chorizo to meatloaf. Thankfully I have access to gluten-free chorizo in an Italian specialty shop three hours away. I used it the other day in my Jambalaya as well. There is also a farm close by that makes artisan cheeses and dry cured meats - all gluten-free at a dedicated gluten-free facility. They are adding chorizo as well!
  2. For me weight gain stems from a few things. When I had my bloodwork done initially and was told that it strongly suggested Celiac Disease I went off gluten that very day. I was in shock so went on many binges because I felt I somehow deserved it. So, I gained weight because I was stuffing my face at every turn because I could. I even bought cookies for...
  3. I used these and laminated them for all the countries I travel to. They are free but a $5 donation for the website is requested. Open Original Shared Link
  4. Have you tried free-form meatloaves? Just shape it onto a broiler and bake. That way the fat drains off and doesn't just sit inside the pan. I always sautee the veg prior to adding. I also and add milk to the breadcrumbs so they suck up the moisture (this is called a panade). Soft breadcrumbs work best for this. Adding freshly-grated nutmeg adds...
  5. When I did my challenge my dietitian told me to introduce 1 piece of bread for three days and introduce another for three more days until I worked up to 4 a day. She said then I could eat all the gluten I wanted which is what I did. I had absolutely no trouble with it. But then I am probably in the minority.
  6. I forgot to mention that a leading Canadian celiac expert last week said at a lecture that only 39% of all biopsies are correctly done in Canada. Not sure about the US. She said those who are getting biopsies must get at least 8-11 of them for greater accuracy. Not to dissuade you if it is what you want/need to do - just to let you know to request numerous...
  7. Yes - I have been there! We've been to the Czech Republic, Germany, Slovenia, BiH, and Austria but have yet to visit Hungary and Poland (which is high on our list). We just got back from Croatia at the end of May and last night just booked flights there for three weeks in October. We cannot get enough!! How did you learn such great English? In school...
  8. I did the gluten challenge for three months and I had a blast because I did not feel sick with gluten. At all. Zero. I was diagnosed with celiac four months ago. Sometimes I find the thought of being strictly gluten free for the rest of my life daunting because I do not have much incentive to be off (symptom wise - but of course that may change - I may...
  9. What area in Slovakia do you live? What a stunning, beautiful country. Thanks so much for this website - I have saved it as I am always looking for authentic gluten-free cooking/baking sites.
  10. Know what's interesting? I can actually read some of that - we have a house in Croatia and go there twice a year. My picture is of the Pula theatre. (Our house is in Itria.) We are going to move there. I know there are some differences in the languages but many similarities. How cool! I have not made that recipe in particular but have made some...
  11. Great to see someone as in love with nettles as I am! I have yet to use them in pesto (thanks for the idea!) but I do make at least 10 kinds of pestos (i.e. mint, arugula). The walnut almond butter intrigues me as well. I grow my own garden, forage in our Croatia garden/hedgerows/sea (am a Master Gardener) and make all my own condiments, etc. Thanks...
  12. As you know, cakes, cookies, brownies and quick breads are so easy to convert. Yeast breads of course are a bit more challenging. But the more difficult and the more lengthy the list of ingredients the better to me. I love the challenge! My current gluten-free projects include: - bagels - English muffins - croissants - various breads, of course ...
  13. Can you have gluten-free corn or veg pasta? There are several spots in Rome that serve gluten-free pastas, actually. Italy is one of the top countries on the planet for knowledge on gluten-free. Unfortunately I am unsure re your additional food allergies. Travel can be tricky with celiac and other challenges. I would definitely take lots of gluten-free...
  14. I have a couple of good ones as well. Just hold on while I look for them...
  15. Mmmmm....looks yummy. I would use my own blend rather than a mix but I love to experiment! Not everyone does. The array of things one can make using a bread blend is staggering. I'm working on recipes for authentic apple streudel using gluten-free pastry.
  16. I've always only made my cookies from scratch with great success (cannot tell they are gluten-free) BUT vegetable shortening and butter behave very differently from one another with cookies. Substituting that can make all the difference. What is Earth Balance comprised of exactly?
  17. Our store that stocks gluten-free stuff has 20% everything in the store the first Tuesday of each month so I've been waiting until this Tuesday. It helps to whittle a bill down from $200 to $160! I know they just got in Udi's hamburger buns and hotdog buns so I am going to try them. Homemade are pretty good but it's so weird having to make buns in muffin...
  18. Are the buns better than the bread? I tried the bread while in Croatia and it was one of the creepiest gluten-free things I've ever had. It was like a crumbly sponge interlaced with old burlap. Very weird.
  19. Good for you! I bet it went by quickly in retrospect. A big fat congratulations to you.
  20. You can buy the rings if you find the thought of using bodies daunting. Then all you would have to do is whip up some tempura batter, dip the rings and fry. It really is that easy.
  21. A brief re-cap - was diagnosed with celiac disease through screening (blood tests and biopsies). I was shocked. Stunned. It was unexpected as I did not feel ill eating gluten. Have always had a lot of energy and only feel lacklustre when I do not sleep (have chronic insomnia due to chronic pain, fibromyalgia and possibly celiac disease??). Since joining...
  22. Scotland was my first international trip and I've been back many times since. In fact, a piece of my heart was left behind there! Believe me - it is even more awesome than a person can possibly fathom.
  23. No problem. Handy when you cannot find ricotta or when you just feel like making it yourself!
