  1. Thanks! Sometimes when you have a bad cold you feel as though you deserve to be spoiled to bits and waited on. Still sick today so made gluten-free crispy crust pizza with all sorts of delicious toppings. It was incredible.

  5. I echo Sylvia's sentiments. Making waffles from scratch gluten free is a very simple way to please your palate! When I first went gluten free I went on a gluten free binge which was not a good way to approach things.   8. I have frozen gluten-free cakes successfully for up to two months but they are homemade so the texture would be vastly different. I have had no problems with icing the cakes after they are frozen.
  9. I don't do mixes but I think that coconut milk would be nice. Either that or make a lemon simple syrup and poke holes all over the top of the cake and drizzle over.   11. One additional quick suggestion - if you own an electric can opener, clean the disk/wheel thing very well as this could easily contaminate. I would also recommend cleaning the cutlery drawer thoroughly. I did not replace my baking stone as it was meticulously scrubbed. I did purchase new colanders, however, as well as a few fine-mesh sieves.
  12. Lamb with curry sauce is a splendid idea. Then you could dip the balls into that if you want. Chutneys are traditional but who says you must remain traditional? The balls can also be made with sweet potatoes - maybe an option for next time. Sometimes a little pickle (even a simple quick cucumber pickle) can be nice to add a touch of acidity...
  13. Do you have the pan for it? You can purchase it at Indian or specialty food shops. It makes the job easier; in fact, it is almost a necessity. Your other option is to deep fry which also works.   14. Oh, another tip. You can infuse honey with vanilla beans, too - it is glorious. I also like to infuse honey with various types of chile but that is another topic.

  19. I always make my own vanilla extract and have used vodka or bourbon. I have not tried tequila but why not? Just allow it to sit for several weeks before trying it.   20. I've always been a good, confident baker and really know my food science so know what makes/doesn't make sense. That and tons of practice. This failure sure was a doozy! That thing is enough to give you nightmares!
  21. Oh, yes. It's funny - I probably bake at least 3-4 times per week (sometimes a few times in one day) and this is the first time I forgot the danged yeast! You know what's funny? It actually was the perfect shape/density for a stepping stone.

  23. I'm usually super organized and could make focaccia blindfolded. I just left that one little container sitting there - somehow it was hiding on me. My next attempt is tomorrow but this time WITH the yeast! As I am a recipe tester I also line up ingredients like you. I just neglected one of the most important components!
  24. It is perfectly normal to go through a grieving process when handed something scary and unknown. The varied stages can certainly do include sadness. I went through shock, denial (I love food too much!), pity, anger, sadness and finally acceptance.
