  1. My coffee grinder is only used for spices as we do not drink coffee. It works incredibly well - it is one of my must-haves in the kitchen as I buy whole spices and grind them myself. As an aside if anyone owns a Vita Mix, they do a great job of grinding rice, lentils, nuts into flours and nut butters.
  2. That is very interesting! I have never been on aspirin of any kind myself but this certainly is great advice for the OP. It would be exciting if this is it as it would be easy to remedy. I sure do hope so! I am very glad that you were able to determine what it was for you.
  3. Christmas meals were a success. We traveled to my in-law's place for a few days. Prior to that there were many phone calls between my husband and his mom about CC and so on. Everyone was so careful and asked a lot of questions without making me feel like a dork. My MIL had arranged a separate prep area for my things and explained to everyone what to do...
  4. Scotch Eggs with Dijon Bechamel (haven't made them in ages!) Truffled Crispy Oven Fries Mixed Greens and Toasted Almonds with Tangerine Vinaigrette Pots de Creme with Pink Peppercorn Whipped Cream
  5. That is awesome! Communal grilling is a lot of fun. Both mine and my husband's family are so understanding like yours - it makes a tremendous difference to have all that support.
  6. I sure feel for you and can relate. I have suffered from horrific insomnia for many years, sometimes not falling asleep at all the entire night, mainly due to chronic pain. There are times I would be willing to give almost anything to sleep as well as my husband does. I sleep well so rarely that I celebrate the times that I do. Having said that...
  7. Since I was a little girl I've cooked and baked things from scratch and still do and always will. I was raised on a farm with a huge garden and all sorts of delicious animals so I grew up knowing the importance of real food versus those icky soup bowl thingers (I haven't tried one but they look grotesque!). I have never been able to understand purchased...
  8. Oh, dear. That raises my hackles! Over the holidays I was asked if I was a little celiac or a lot celiac. The person asked, "My friend has celiac and she has gluten once a week as a treat. Why can't you?" Double .
  9. Will you get rice back on your GAPS diet? I hope so! This recipe is fiddly and time consuming yet not hard. Soooooooo worth it. The starches are tapioca flour, millet flour and sweet rice flour. Millet flour is one of my very favourites.
  10. That is awesome - I will definitely refer back to this thread if I do return to Lincoln. I do have a good friend who lives on a farm near Lincoln. There is a lot to see in Canada but unfortunately not in our area - we live on the prairies with short stubby trees and mile after mile of grain fields. However, several hours away are the Canadian Rockies...
  11. You are welcome! Bayless is revered and world renowned when it comes to Mexican. I tried several cheeses while in Croatia and Italy a month ago and was fine. However, here I am limited but at least I can have aged cheeses and sheep cheese. Still cannot drink milk or eat ice cream but I have excellent alternatives!
  12. Eggnog and pralines.
  13. If anyone has the book, "The Gluten-Free Asian Kitchen" be sure to try the scratch pot stickers. Heavenly!
  14. Due to the lack of gluten, pie crust is actually SIMPLER to make than gluten-containing crust because it does not stretch. It is more pliable and easier to work with. I would definitely recommend trying it.
  15. The house is filled with wonderful smells. I am making: Bang Bang Chicken (served over vegetables) Nuoc Cham Sharp and Sweet Red Peppers with Pink Peppercorns and Cardamom Pink Peppercorn and Cardamom Meringues with Blackberries and White Chocolate Should be fabulous!
  16. All sorts of yummy stuff from enchiladas (with non-tomato sauces) to sopes to chicken mole to stuffed poblanos to corn tortillas to tamales to poblano soup. One of the very top Mexican chefs in the US (Chicago) has great authentic recipes on his website. They are what I use most. You have likely heard of him - his name is Rick Bayless. Open Original...
  17. In my experience thickly-sliced bread works more successfully for French toast. I make my own and slice it a good inch thick! Sorry - I have yet to make it with commercial bread. Maybe try regular French toast first to see how Udi's responds.
  18. Hi there! I am from Alberta.
  19. Merry Christmas from a fellow Canadian. My wait was four months for my biopsies; however, I have waited 18 months to see specialists so I understand your frustration. I asked to be put on an emergency wait list and was called to go in a few days later. It didn't work as I was away but perhaps you could request it if you do live close to your health centre...
  20. How cool is that? I love hearing these success stories. Get this - I live in Canada but a job I had about five years ago required me to travel back and forth to Lincoln several times! So, I kind of know it. A really pretty city in my opinion - love the downtown area and the lovely old houses surrounded by large trees. Makes me jealous as we are...
  21. I love BB. My favourite is Thomas Keller's French Laundry version. I am so thankful that it can be so easily made gluten free, just as so many classic French dishes can. What a kind neighbour to make such a wondrous dish. Oh, man. Here I go again - it's always food with me!
  22. Though not for lasagne, I make "pasta" from carrot, zucchini, turnip, asparagus, parsnip "ribbons" (mandoline) to mix with homemade pasta. Lovely.
  23. Awesome! You have been busy. Your baking sounds wonderful. As I am trying to lose a bit of weight I have not done as much baking this year (just some shortbread, chocolate chip cookies, coconut lime layer cake, rosemary fleur de sel crackers, focaccia). However, for gifts and such I have made: Bourbon Vanilla (simply scrape vanilla pods and add pods...
  24. Aged Gouda is one of the cheeses I can find in Canada, thankfully. Three hours away is a city where we go to do our food shopping and thankfully there are superb ethnic shops there. Usually I start salivating as soon as I enter the stores! Man, I love food shopping. Surprisingly for the Canadian prairies, there is a local sheep cheese maker. She...
  25. Great idea. When I slice veg for similar dishes using my mandoline, I also sprinkle the veg with salt to help draw out the moisture even further. It is amazing how much water vegetables contain! I simply sprinkle with salt and place in a fine mesh strainer for a few hours. I'd suggest making your own lasagne sheets but it sounds as though this is...
