  1. Actually, this is the best place to ask which is the best without wasting a lot of money on trial and error.
  2. One of my sons went to Rochester Institute of Technology and the other to SUNY Purchase and both had on campus apartments with full kitchens. As freshman they were in a dorm but had refrigerators and there was a common area with a microwave.
  3. I just slice them lengthwise and lay them on Udi's bread.
  4. Yes, they are fine. I've had them many times. Tthey are just potato chips.
  5. Gluten only: Breakfast: Weekdays: Chobani or Fage plain fat free greek yogurt sprinkled with ground flax seed, fresh berries or dried cranberries, chopped walnuts and corn chex for a bit of crunch. Weekends: Omeletes with gluten-free toast. Lunches at work: dinner leftovers heated up. chicken salad, egg salad or tuna over greens with grape tomatoes...
  6. HA HA some people don't have good bone marrow.(good one) Mine was our family doc telling my parents I had "nervous stomach." Not diagnosed until after my second pregnancy when I think the stress to the body made all of the chronic symptoms worse, especially anemia. More severe than could be explained by childbirth.
  7. My sister in law was watching Emeril's show and saw him make these cookies. Since he said they are also gluten free she made them when we went to visit and everyone gobbled them down. I made her show me the recipe because I could not believe they had NO flour. Open Original Shared Link
  8. Adding a few drops of olive oil to the boiling water prevents it from sticking together.
  9. No problems with coffee from Dunkin Donuts or any other coffee shop.
  10. If you can't find bittersweet without soy I jut found this subsitution list and I guess you can use unsweetened. You just have to increase the sugar. See under bittersweet. Let me know how it turns out. It wouln't be as good without the topping so I don't know if there is a lactose free heavy cream. I do have to say. This must be about a million calories...
  11. One of my favorites: Open Original Shared Link
  12. I agree on the english muffins. I like them and they work good for burgers on the grill. I like the bagels too. Good toasted with lox and cream cheese. Sometimes I cut out the middle because they are too fat.
  13. Another easy "do-ahead" recipe good for camp or in my case "ski trip'" Mexican enchilada casserole. I like to use the plain Goya black beans. Whats nice about this one is you can make up your own layers. Open Original Shared Link
  14. Emerils flourless peanut butter cookies. My sister-in-law made these for me and you would not believe they do not have flour. Excellent! Open Original Shared Link
  15. Another easy treat: 7 layer magic bars Open Original Shared Link I just replace the graham cracker crumbs with crushed gluten free shortbread cookies or crushed Corn Chex Cut into squares and layer in airtight container with wax paper between layers. You also can freeze these. Kids love them but so do the staff in my office ;-) Good luck.
  16. Great treat: Rice krispie treats. Super easy and just use the crispy bronn rice cereal. Also excellent with 1/2 cup creamy peanut butter added before mixing and I'm pretty sure the Kraft marshmallows are gluten free. They keep well in tupperware. Open Original Shared Link For a dinner, how about a nice baked ziti casserole and slalad made with gluten...
  17. I just look at the ingredients because years ago when I was diganosed there wasn't a lot of specific "gluten free" labeling so us old timers had to learn to read each label and know how to recognize things that might contain gluten ie: hydrolozed vegetable protein and modified food starch unless they tell you the source.
  18. PS: I've also done this with the real thick greek yogurt in place of the sour cream. That also works well. I know some can have yogurt but not the sour cream.
  19. PS: You don't even need a mixer for this. I just use a bowl and hand whisk.
  20. Sour Cream Cornbread Gluten free 1 small can creamed corn (8 oz.) (Libby
  21. I think the filling for this is from Bette Hagmans book but another I have been using for years and is always a hit. Simply Scrumptious Gluten Free Cheesecake Crust: 2 cups toasted pecans or any gluten free cookies crushed (Pamela
  22. It's funny because I had been using this for years even before diagnosis. I found it in a William Sonoma catalog and was using it for passover. Everyone loved it and now have to make it every year. sometimes the best recipes are the ones that were never intended to have flour or gluten rather than trying to subsitute. I do an awesome cheescake where there...
  23. I wouldn't use unsweetened chocolate because the flavor wouldn't be the same. I don't think Bakers bitterweet Chocolate Bars that I use have soy. I can check when I'm back at home. This wouldn't be as nice without the glaze but let me know about the substitution. It does need something on top.
  24. OOPS! sorry for the typo. the oven temp is 350 NOT 3500 (as if any ovens go that high :-)
  25. I wasn't sure about the cream since I'm not lactose intolerant but I was at a home show once and there was a table from a Wisconson cheese company. They had info about labels on cheese. They said if the label contains no sugar, it contains no lactose. Since lactose is milk sugar it makes sense. What do you lactose intolerant people think of this? PS: this...
