Interesting you should post this now. I was just researching this. I think I have a problem with a high oxalate diet. Sometimes I feel best when I quit the green drinks, almonds and even sweet potatoes. I don't know if it's connected or I just had some sort of plant poisoning. i think at the very least rotating greens and varying the diet will help.... - 
	Most of the time it's just a few days. Two times it's been about 3 weeks of pain pain pain. I think in those cases it was cumulative gluten over the course of days. Both times I was on trips out of the house.

When I am not doing well, because even on a completely gluten free diet there are times when I'm just not feeling great, I will get myself to a paleo or perfect health diet (which allows rice and potatoes). I do organic, whole foods and only feed myself. This is how I feel absolutely the best. I personally cannot handle gluten free substitutes at all... -

Um. Yes. I do react that severely. To wheat and corn. And now you have me wondering if my Thanksgiving glutening which crashed me until yesterday (so 2 1/2 weeks) may have been corn...or both corn and gluten cc. I don't know. I know what you're asking...I always just thought it depended on how far along the disease had progressed. I know some people respond to the diet immediately and some take years. So I assume it's how weak your body has gotten before you were diagnosed. Age might make a difference too. My daughter seemed to get better after only a month. (was age 7) ... -

I agree everyone has different symptoms. Also, I have learned that I have specific reactions to different foods. In the past I have blamed all my stomach issues on gluten, when I now know they are really a reaction to dairy. I find that I can eat rice a few times a week (and rice flour) with no problems EXCEPT when I'm in a state of inflammation from a glutening. Then I have to cut rice and all nightshades until I'm completely over it then I can use rice, rice flour and nightshades sparingly again. Seems to be true for wine too. 	I got glutened over TG and am still suffering. Usually it seems like it only takes 3 to 5 days but this is a doozy. It's like fibromyalgia pain and fatigue....oh and a pinched nerve on top of it. So, the upshot is since I am a SAHM and my family is fairly sympathetic I've been watching a lot of t.v. and going to bed around 7:30 at night. This is coming...

Diana, I also have to say that I ate at PF Changs yesterday with a lot of trepidation (don't know why...just not as plain as Outback I guess) Anyhow, I had zero problems yesterday or today. I have an app for whole foods on my iphone that we've used as we travel. We go to Florida a lot, but never Pensacola. Anyhow, probably like your travel, we now make sure we have a kitchen and know where all the WF's and Outbacks are. My mother, myself and my daughter all have dreams of accidentally eating gluten. My daughter and I are about 2 years gluten free, and I believe my mom is 4 years gluten free. I always have a dream where I am eating something then 1/2 way through think, "What the heck am I doing? This is loaded with gluten." Like I totally forget to think about gluten... - 
	I have one other word of advice, which may cause some controversy. IF you self diagnosed (I did) I would from the get go just say you have celiac. When I first went gluten free it was out of desperation to feel better but I didn't know what to do besides an elimination diet. Once I'd narrowed down that it was gluten I went to the doctor. 	Yes the fatigue will go away. But you are only 3 weeks in. Healing might take 6 months to 2 years. And within that space of time you should see marked improvement. Don't let that time frame bum you out either. I think it just helps to be prepared for a little bit of a long haul. I think what most people experience is that you start to have good days...

	This actually sounds pretty normal, esp 3 weeks in. I remember very well trying to come to terms with the fact that I'll never eat a pizza or hamburger again, not another ice cream cone...everything was going to change. I had to learn to COOK for heaven's sake. It's a lot to go through mentally on top of everything that is happening to you physically....

I can't think of specific restaurants anymore, (we were there summer before last) but we were able to eat gluten free pretty easily. It sounds like your husband is not gluten free, so I would imagine it would be fairly easy to eat gluteny veg meals. We had a lot of luck at Indian restaurants. I just have to agree with the elimination diet. That is initially how I figured out that I was gluten intolerant. I was so sick for awhile that I cut gluten and dairy at the same time out of desperation. So when i added dairy back in (for a split second) I realized that dairy was actually what was giving me the severe diarrhea. Oh absolutely! You can research this board and find many stories of people glutened for the first time after being gluten free for even just a few weeks. I had one bowl of soup (not even a piece of bread) and was bed ridden with joint pain, fatigue and a nasty DH rash for 3 weeks. It's very possible. -

	FWIW, corn makes me feel just as awful as gluten. And my daughter who is nine, I think has an even worse reaction because she gets really bad hives too. I am always very interested to read how young people fare on this board, especially college students because I will be sending my daughter off eventually and she cannot eat gluten, corn, dairy or soy....

Sort of on that note: I heard from 2 different people over one weekend that they put their dogs on a grain free diet because it's so much healthier for the animals...but they themselves would "die" without bread.
