  1. Good for you! You will feel soooo much better. Soy is almost as bad a gluten for me. I started thinking I was allergic to everything I ate. But 6 months into this and having eliminated gluten, soy, dairy, and almost all corn, I feel really better. I eat corn chips like once a month and popcorn once in a while. But arrrgh....corn is in ascorbic...
  2. I agree with CassP, it is very very common for Celiacs to have Hashimoto's and anemia.
  3. Yeah, and the sad thing is....I bet he is not the only one. If people don't have it, they don't understand it, especially when you start talking about CC.
  4. I had edema in my lower legs. I was quite alarmed when it happened as I had never had it before. Little did I know that it was going to continue for years. I was given a diuretic by the Dr. but told not to take it for more than 7 days during my cycle. So I knew they thought it was menstrual. And I knew they were wrong. I didn't get relief of this symptom...
  5. I wanna do Paleo, but I wanna keep chocolate too.
  6. I love Nutella! When I discovered it was gluten free, I knew I could survive. Toasted Udi's bread with Nutella and a cup of coffee is heaven. Reminds me of my old chocolate croissants.
  7. Many of your symptoms seem to be fructose intolerance and if the legumes are bothering you it might be lectins. Some people cannot eat fruit high in fructose and some cannot tolerate legumes. Consider these two in addition to the SIBO infection possibility and closely watching you CC. I hope you feel better soon.
  8. If your neurological Celiac, you might find avoiding gluten helps with the borderline autism. Some find great relief staying gluten free. I hope you do too.
  9. Yes, wash face and brush teeth...yes, every time. I found out the hard way. I call it the kiss of death.
  10. Grass fed ground beef Grass fed steak Hormone free chicken breasts Salad Greens Ranch Dressing Mango's Blueberries Raw Cashews Raw Walnuts Unsalted Sunflower seeds Almond flour and Chocolate 3 ways Snickers Chocolate Chips Nutella
  11. Nutsonline has a selection of Certified Gluten Free nuts, seeds, flours and candies. I have used them and have not gotten sick.
  12. Eating at other people's homes and in rstaurants is very difficult. Even eating in your own home in the beginning months is difficult until you learn all the ways you can be cross contaminated. But you will get the hang of it eventually. Read as much as you can and I'm glad your test was so soon. Collanders, scratched pots and pans, shared utensils like...
  13. Some Possible outcomes are: 1. Many people try to return to eating gluten for 3 months and find they simply cannot handle the symptoms. Result: They go gluten free and forget the testing. 2. Other people make themselves handle eating gluten for 3 months and feel lousy the whole time and still test negative. Result: They go gluten free and try to forget...
  14. what the heck do you do with lemongrass?
  15. And your dark chocolate just might be dairy free anyway! Isn't that good news!
  16. Yes, it can be a delayed reaction. It can also be that there is damage from the gluten and your pain and digestive problems can continue until you are gluten free for a period of time long enough to heal. It is not a direct cause and effect relationship like you have to feel bad only directly after eating gluten. That is why it is so hard to figure...
  17. Other food sensitivities can develop anywhere along the line of recovery and after. I didn't think I had a problem with dairy or soy and did not eliminate them even though it was recommended. I just wanted to believe gluten was my only problem. It wasn't until I felt symptoms again that I had to consider other food intolerances. Then I found out...
  18. I am another who had to get rid of soy. Get rid of soy and see how you feel. Also minimize "gluten free" foods. It helped me feel better.
  19. I don't know about your mortar and pestle question but someone will answer you on that. I think all those packages that were around in your gluten days need to go out if they could be cross contaminated. However, what I found interesting is your use of vegetable oil..which is almost always soybean oil. It can cause all the symptoms you described...
  20. Yeah I agree. I bet I would have healed faster if I had understood this point. Now I keep it to one gluten free item a week. A slice of Udi's, a dessert, or a few cookies. Not all three in one week. I don't think they are safe enough to be eating every day. There must be a cumulative effect...the way I figure it...better safe than sorry. People...
  21. What kills me is that when I was at my sickest...bumping into walls, falling down, crying, depressed, anxiety, migraines, and muscles so weak I could hardly get out of bed except to try to go to yet another Dr. who thought I was a hypochondriac, in spite of the fact that I had several unhealing sores. That went on for 5 years....well, all I could really do...
  22. YOu are brilliant to have figured out the connection between nightmares and wheat. It is one of the things I look back on in my son't childhood as strange because there was nothing to be upset about but night sleeplessness or terrors were common. Also the bedwetting. I did as a child until I was way too old to be doing that. My son also had this problem....
  23. I was mentally and physcially debilitated for 7 years. For almost 5 years I was hardly ever out of bed except to visit the bathroom. (or the Dr. ) Headaches, fatigue, nausea, depression, anxiety, weight gain without hardly eating anyting except soda crackers for nausea. (yeah, I know ) The first week of gluten free I had so much improvement in all...
  24. I think you are clearly and definitely Celiac. Your Dr. diagnosed you based on the high blood test. He may be one of the more proactive Dr.'s who are willing to diagnose based on blood tests alone. This is a good thing. The issue most people have is their Dr. won't diagnose them with Celiac without a positive biopsy, but in your case, you have the diagnosis...
  25. It sounds like fructose intolerance. I read a post on here a few days ago by Mack the Knife saying his girlfriend had it. Do a search here for fructose intolerance and you will find it and a whole bunch of other people who have the same problem in addition to gluten. There are several fruits that are higher than others and there are good lists if...
