I had mouth soreness, swollen gums, and terrible burning tongue and mouth for 3 years before my DX. No doctor could explain it. Some said it was "hormonal", some said it was "idiopathic", blah blah blah It gradually went away after going gluten-free. If you are gluten-free, maybe it is something else causing it.. like a vitamin C or B-12 or other...

I am sorry about the flooding too, Nicole. It has rained 13 inches here in the last 3 weeks, but finally, it stopped. Just crazy weather. The poor people who are still recovering from SuperStorm Sandy in NY---just got whacked again by flooding when the creeks overran the borders again. I feel so bad for them. Yeah "poopology" does not bother me I made it my business to learn about the GI tract (no matter how ugly and gross it may be) so I could get well. Your baking products need a binder//thickener /stabilizer to make it rise (something gluten does in wheat flours)] xanthan gum does this for us G F bakers. Some people say you can bake G F goods without it, but I do not agree. However, in a simple cobbler recipe like the one you link to? You can do without it. -

I asked my friend what she uses in the deep fryers in the G F bakery. Canola. (can't use soybean or peanut--she is thinking of everyone's various allergies and intolerances). she's a sweetheart and partly the reason I have gained 40 lbs. since diagnosis.. -
