  2. I had mouth soreness, swollen gums, and terrible burning tongue and mouth for 3 years before my DX. No doctor could explain it. Some said it was "hormonal", some said it was "idiopathic", blah blah blah It gradually went away after going gluten-free.   9. I am sorry about the flooding too, Nicole. It has rained 13 inches here in the last 3 weeks, but finally, it stopped. Just crazy weather. The poor people who are still recovering from SuperStorm Sandy in NY---just got whacked again by flooding when the creeks overran the borders again. I feel so bad for them.   19. Your baking products need a binder//thickener /stabilizer to make it rise (something gluten does in wheat flours)] xanthan gum does this for us G F bakers. Some people say you can bake G F goods without it, but I do not agree. However, in a simple cobbler recipe like the one you link to? You can do without it.
