  1. Roasting pan with an aluminum foil "tent". My sister-in-law used to make it that way and it was SSSSOOOOO GGGOOOODD!!
  2. Is there any reason you don't have a DX? Did your doctor refuse to test you or did he test you and it came back negative? I ask because you haven't really been gluten-free long enough to make a difference. You go off gluten, then back on it. If you have celiac you are basically killing yourself by doing that. You say you went gluten-free again about a...
  3. OK, so one of the grocery stores near me has finally started a gluten-free section. Last night I picked up some Tinky-whatever-they-call-it lasagna noodles. I know most gluten-free stuff cooks up differently from regular. I need hints on how to make lasagna using this stuff. I know I can use the same sauce, cheeses, meats, and mushrooms I used to use, but...
  4. Lay several slices of bacon across the breast so it looks striped. You won't have to baste and people will be fighting over the bacon when it's done. Trust me. This is GOOD!
  5. Congratulations! Your doctor has given you a diagnosis. SO many here have struggled with doctors who either refuse to test them, perform the tests wrong, or read the tests wrong. Your doctor sounds like a good one! While to many folks a diagnosis isn't important, for some folks it is. It gives them the extra willpower to stick to the diet. Others need that...
  6. There's not a smoker alive who doesn't know about the risks of cancer, heart disease, stroke, lung disease, etc. Fear of possible health threats in the future will never convince anyone to take care of business. I think the possibility of feeling so much better is more likely to do the trick. Trouble is, if someone is asymptomatic, even that won't work...
  7. So how long have you been gluten-free? I ask because I had terrible insomnia for years. (I know exactly what you mean about the stress and anger in the middle of the night!). After I had been gluten-free for a few weeks it got better. I still do wake up early (2 or 3 AM) sometimes, but not as often as before, and if I feel like I am too wide awake I just...
  8. DQ, if you haven't already, go to the coping section here and read the Newbie 101 thread. It'll help a LOT.
  9. Because you say it was the worst glutening in 8 months, and because Con-Agra DOES disclose any gluten in their products, I would venture to say it might not have been a glutening at all, but the "bug" that has been going around.
  10. Yep. The sooner you quit, the sooner you will be healthy again. Do go to the Newbie 101 thread in the coping section here to learn how to avoid cross-contamination and so much more. It may sound crazy, but congratulations on your diagnosis. You can now control your health without surgery or medication. A simple change in your diet and you can avoid the...
  11. I was never on HRT. Just didn't want it. But my hot flashes were ALWAYS in my head and face. Menopause came early for me (at 43) and I am now 60. And yes, I STILL get hot flashes occasionally. It's not like it was at first when I would get them dozens of times a day or anything. Just once every week or two and only for a few minutes.
  12. Elimination diet. You know the drill. Cut out the corn and potatoes. If you feel better after a while, add one of them back and see if it gives you problems. Potatoes are a nightshade so perhaps you should cut all nightshades too for a while. I have found that if I eat nightshades in limited amounts I'm OK, but if I eat them for several days in a row...
  13. I don't shop at Sam's, but I was pleased to find that one of the small grocery stores in my tiny town now has a great gluten-free section! Several different brownie and cake mixes, lot's of different flours, a bunch of salad dressings and dips, cookies, crackers, chips, etc. I'm going to take pen and paper with me next time and get the names so I can ask...
  14. You're on the right track. All I would change is the raw veggies. They are easier to digest of they are cooked. And yeah, instead of cream of rice, just go with plain rice. You could even mix fruit with it for breakfast.
  15. I'm so sorry my posting the article led to this! I hope you're OK!
  16. Stop and take a breath. Then accept this ((((HUG)))). You've been through so much! My heart goes out to you and your daughter. One thing to know is that celiac runs in families, and that quite a few folks have found that there is a connection between celiac (at least in some cases) and autism. Does your daughter show any other symptoms? Maybe you should...
  17. When I first started I couldn't eat salad greens or sweet potatoes. There was no good reason. To this day I still get almost instant gluten-like symptoms from blueberries. Once again, I can think of no good reason except maybe Murphy's Law because blueberries are my favorite fruit. I got the greens and sweet potatoes back and am hoping someday I'll have my...
  18. I don't worry about shared facilities unless it's something like a bakery (or a friend's house) where there is flour dust in the air. But even that isn't always correct. I DO eat at a restaurant - a pizzaria of all places! - that makes both kinds of pizza. BUT, they have a family member with celiac so they know enough to make the gluten-free pizza in a different...
  19. In restaurants of course they can't cook your pasta from scratch when you order it. It would take too long. So they cook up a bunch, cool it, then when someone orders some they just drop a portion in water that was boiled but is now just really hot, stir it around for acouple of seconds, then take it out and drain it.
  20. Let us know! Thanks.
  21. I wasn't sure where to put this here or in the section about weight issues. But since this article is about more than just weight, I figured here was better. There is an article in today's BBC news talking about carbs and sugar spikes. They did experiments with cooling and then reheating carbs (spaghetti, but it also works with white rice), and they found...
  22. Excellent news! And I expect you're right in thinking it's because you are getting healthier on the gluten-free diet. I actually got a cold about a month ago. The first one in TWO YEARS! Whenever it feels like living gluten-free is hard, just remember that it also makes our lives SO much easier.
  23. I've done a similar type of thing. On occasion I've said, "You're improving! It's entirely due to my influence of course. You mustn't take any credit." That was a quote from Doctor Who and those few times I said it, even after I explained, people were in a snit over it.
  24. I would have a talk with the doctor though and tell her what you told us. Tell her you feel betrayed and lied to. Then tell her she's fired.
