I just went to their website and saw this: How is Cold Mountain Miso made? Our Miso is made using filtered water, organic whole soybeans, rice, sea salt and koji starter. So yeah, I would eat it. (That is, if I liked miso. ) -

Well, the bread has "soy protein" so I know I'm OK with soy now. And if I can eat corn starch and corn oil I would bet I can eat corn syrup too. From what you have said, there might not even be a microwave at some of the places they send you. But you could get one of those small electric teapots that you just plug in to heat water. That way you'd never be left high and dry. -

It does sound like you may have celiac. But it DEFINITELY sounds like you DO have Lyme disease. You need to talk to your doctor again. According to the CDC, if someone has the rash, no further testing need be done because that IS a diagnosis of Lyme. (And the Lyme disease test is notorious for giving false negatives.) Frosted, have you checked all of your supplements and medications? Do you have your own dedicated toaster? Are you using scratched teflon pans or scratched plastic containers? That is definitely withdrawal. And I hate to say it, but it can last two or three weeks. But stick with it because when you come out the other side you will be feeling better than you have in a long time. Cross-contamination is a real concern. Thanks for the tip, Waiting. Back when Mom was diagnosed with celiac (the '80's), there were hardly any substitute foods available. So she stopped making her incredible lasagna and started making eggplant parm. Same recipe but she used eggplant instead of noodles. It was heavenly!
