I used the recipe that's on the package of King Arther gluten-free flour. I found it in the regular flour aisle of my grocery store. Be sure you get gluten-free if you want to try it. -
Talk to your PCP and ask for a full Celiac blood test. A lot of your symptoms *could* be Celiac, or gluten intolerance? It's not something most Dr.s think to test for. Continue to eat gluten until your tests have been run. Your PCP will tell you if you need to see a GI for the tests. Good luck to you! I hope you get some answers.

After going gluten-free I had nausea, or migraines after eating some foods. The nausea progressed to vomiting after ingesting soy. I removed all soy from my diet (not easy..it's in supplements too), and I found that dairy was giving me headaches..that progressed to migraines. Took that out. I got that book from the library after someone recommended it. The modified wheat is scary! I wish my hubby would read it, because it's obvious to me that he has a problem with wheat. They have been tinkering with soybeans and corn too. I wonder how long it will be until we see other Celiac-like diseases because of the genetic engineering on those... -
For me it's brown rice. I used to have it at least once a week. Now just the thought of eating it gags me.

I'm wondring if the gluten/gliadin test was negative because you weren't eating gluten? It sounds like you had a dramatic improvement gluten-free? I haven't experienced any withdrawl symptoms from gluten-free foods, but I've learned that if you're craving something, it's usually bcause your body has an intolerance to it. Your BF seems to have a lot of the Celiac symptoms? If he goes gluten-free it will be a lot easier for both of you. I SO wish my family was on board with going gluten-free. You have to add good fats..like Olive oil,nuts, avacados, and coconut oil. If you're eating mainly fruit, veggies, and meats it's hard to get enough calories. If you tolerate dairy, cheese is good for adding calories too.

It's so hard cooking gluten foods and not tasting them for seasoning, etc. At first I made gluten-free pasta and regular for my son and hubby. IMO you should wait for the results of the tests before going gluten-free if you think they'll want to do an endoscope. They want you to be consuming gluten to get a good biopsy. If you think you won't be getting a scope..go ahead and go gluten-free. Be aware that 20-30% of us test negative in the blood work, but have positive biopsies when scoped. If you...

It's hard to answer your question because there are so many variables. Your own reaction changes each time. It depends on how much gluten you ingested, how much damage/inflamation you have in your system, hormones, and a variety of other things. You could have a reaction that lasts hours, days, or weeks. If your daughter reacts with symptoms that are more neurological than GI..it would take longer to see a difference. It's been my experience that Neurological issues generally take longer to heal. It's good you know that gluten gives her problems. It's so hard to figure out some of the food intolerances.
