  1. Mmmm..sounds like you have the start to a Mexican pizza? McCormick brand makes a gluten and dairy free taco seasoning..but read the package, as they make several and some have dairy ingredients. Brown some hamburger... add the taco seasoning and mix with those toppings and you'll have a great meal. I think it would be yummy even without cheese?
  2. I guess I'm a bit confused here? You tested positive to Celiac blood tests? Then you must be gluten-free to feel healthy. If you have a damaged gut from gluten, it can make you more sensitive to soy and dairy..and other things, but generally, the gluten(zonulin) opens up "cracks" in the intestine that lets the others enter your blood stream and make you...
  3. Ask to be tested for small intestine bacterial overgrowth(SIBO). If you have bad bacteria in your upper intestine it can rob the nutrients from your body, causing malabsorption of some of them. They can also emit toxins into your system as they feed, causing reactions like dizziness and night sweats. Did you get an endoscope done to see how your villi...
  4. I love hoarders too! I always feel like cleaning after watching. LOL My hubby won't watch it..I think they could do an episode in his garage? Really like the Restaurant impossible, Can this Bar Be Saved, and Hotel Impossible. Like all of the CSI type shows and Law and Order..and looking forward to the new season, 2 Broke Girls( I forgive them for making...
  5. The anaphalactic shock is really scary! It would be best if you stay away from foods that can be cc and foods made on shared lines and factories *could* have enough of your allergens to cause you trouble. Be safe..and don't take the chance on eating them. For breakfasts..there are gluten-free cereals available. I like to eat them with the vanilla...
  6. Don't let your Dr scare you! Mine kept telling me there was nothing wrong with me and ordered a CT scan just to shut me up. It showed a lot of very enlarged lymph nodes. It's what finally got me the referal to a GI and the endoscope that DXed me. My enlarged nodes were caused by the inflamation of Celiac disease. Yes, it can be a symptom of cancer...
  7. I take ground chicken and crumble and brown it. I add coleslaw mix (shredded cabbage and carrots) and stir it in and turn off the heat. Add a spinkle of garlic powder and salt to taste. I roll this mixture up in the softened spring roll (rice paper wrapper), then sometimes I deep fry them in peanut oil, or eat as is with a sweet and sour dipping sauce...
  8. People with villi damage from Celiac sometimes don't have the enzymes to break down the lactose in dairy. Eating dairy that is lactose free or low lactose is best. Yogurt falls into this category as do most hard cheeses. The lactose is "eaten" up by the fermentation process. Many of us also find that we can't tolerate any dairy at all, at first. Once...
  9. I, for one, would love to watch you chase your chickens around. I'd love to have some, but I live where we can't have them and our 3 dogs would make it impossible anyway. A year gluten-free and I'm still not at a place where I'm comfortable around others' food. I have also developed many additional food intolerances. My diet is very boring and limited...
  10. At one time a few years ago I had alternating C and D. Then it slowly changed to C, all of the time. When I was DXed with Celiac about a year ago, the GI said the C should clear up on it's own over time, but I should be sure to drink plenty of water. I've struggled to regain my health since my Dx. I eat non processed foods. My only gluten-free item...
  11. There are all sort of chemical processes that go on in the body to create energy. You need the basics of B vitamins, iron, D, amino acids and Omega 3s. It's really important to eat a bit of protein with every meal. A B12 supplement is very helpful to a lot of people. If you have a lot of damage to your system, the B12 that you put under your tongue and...
  12. Have you been tested for small intestine bacterial overgrowth (SIBO)? I was reacting to more and more foods and was tested. They said I probably have a severe overgrowth, because not only was my hydrogen high..I exhaled methane which is very unusual. I was told that the bad bacteria feed on what we eat and emit toxins. They can give us very strong reactions...
  13. My son and hubby still eat gluten. Our dishwasher is old and I was seeing "stuff" on the dishes after washing, even though we prerinse everything. I decided to just keep a few plates/dishes/silverware separate from theirs and immediately wash them seperately by hand after eating. I wouldn't use a common sponge/dish cloth if it were me. I have cast iron...
  14. I had entomoeba coli, which I was told usually isn't harmful with a healthy digestive system, but I didn't have a healthy system. I was treated with Tindamax for 3 days. I tolerated the med just fine. After taking it I felt like I had a boost of energy. It was surprising how much a little thing like a usually benign organism affected me. When I picked...
  15. I would question the cornmeal. I was doing fine with plain Fritos then all of a sudden I started to have bad reactions to corn. You never know if they're using GMO corn? You could possibly have a reaction to GMO corn that you wouldn't have to regular corn? It's very frustrating to think you're on track..and being so careful and then whammo..out of the...
  16. I like to see all of the ingredients. This one seems to have a small amount of soy and dairy? It would bother me, but if you're not having a problem with those items they should be OK? Open Original Shared Link
  17. Have you been tested for small intestine bacterial overgrowth(SIBO)? If you had it when you were DXed with Celiac and nothing was done to normalize your gut flora, it could be what's making you feel bad?
  18. I had a very strong reaction to inhaled flour. I was cleaning the cupboard where we used to store it. I was wearing latex gloves, so I'm sure I didn't get any on my hands. I got really sick! Everything that restaurant worker touched had contamination. I'd be very afraid of going there.
  19. I fired my PCP when going through all of this stuff too. He kept telling me there was nothing wrong with me..and I'm not exagerating...I was dying! Be careful with the Omeprazole. Acid reflux can be caused by too little acid, rather than too much. When you don't produce enough it sits on top of your food and is burped up when your food isn't digesting...
  20. McCormick is one of the brands that's very good about labeling. If they say something is gluten-free I trust it. That being said, when my gut was very inflamed when first Dxed I couldn't tolerate paprika. I had to give up using seasoning salt because of it. I switched to just plain salt on meats, etc. I was fine with potatoes and tomatoes, but paprika...
  21. Unfortunately the testing isn't 100% accurate. Even the genetic tests can be misleading. Most Dr.s only consider DQ2 and DQ8 as Celiac genes. As time and study goes on though, they're finding more genes are Celiac. Your scope showed some damage. With your gluten restriction it's possible that you started healing enough to make the damage patchy/less...
  22. When talking to the Dr. at Mayo Clinic I said I felt better back when I smoked! I quit so I could be more healthy. My asthma got worse and my digestive issues got worse. He said that smoking suppresses Celiac symptoms. Just wanted to confirm that issue.
  23. I don't have any experience with Enterolab or CeliacSure, but some here have used Enterolab. If your Dr. won't test you, or if you get tests and it comes back negative, give the diet a good 3 month try? Rather than use gluten-free versions of things, it's best to eat whole foods, like fruits, veggies, meats, eggs and fish at first to avoid any problems...
  24. This is what may be happening to you: A hormone (CCK) is made in the duodenum that is sent to the gallbladder and pancreas telling them to perform their digestive duties. For the gallbladder, it means squeeze out some bile. For the pancreas it means release the digestive enzymes. If you have damage in your duodenum, which is very common with newly...
