Individual brands vary? Seriously. A fresh corn tortilla tastes unbelievably different from one purchased in a store. That said, heat it up before using and season the heck out of whatever is inside. -

Asparagus rolls-everyone loves these. A slice of good quality salty ham (Boars Head sliced thick sandwich thickness) Canned asparagus spears - I use the fancy ones but not pickled Cream cheese Spread 1-2 tbsp. of cheese on a piece of ham, lay an asparagus spear on top, roll and secure with toothpick . Cut in half. -

Perhaps he has secondary intolerances? Milk is the #1 offender, and soy - and both can leave damage on an endoscopy if there's an intolerance. But if his blood work is high that's less likely than gluten. Have his numbers gone up or just not decreased? And perhaps he's getting into gluten when he's out of the house? -

If its a cold/hot thing try a cold cut (Hormel has a gluten-free, natural one). Stay away from the juices, IMO. Even with protein powder added its a lot of sugar. Try nut butters with fruit. -

For breakfast try a slice of ham browned on a skillet and toss a sliced tomato in the skillet, too. It will caramelize and get sweet. Add salt and pepper. I also add fruit like an apple or grapes. That's my new fave. Nuts are great, along with a carb/veggie like sliced bell peppers, etc. just check the ingredients list in the nuts for wheat or anything... -

It may be a texture thing on the waffles. Do you have a Belgian style (thick) waffle maker? Eggo's are pretty thin. I had it when I started taking supplaments d and iron. I also had it when my blood sugar went wacky. I still get it if I eat too much sugar. Doc told me it was my liver, adrenals and possibly gall bladder trying to figure themselves out. -
