In the beginning, when it comes to baking, I suggest a mix. It helps you learn what gluten-free can be and the types of flour mixes you like (mixes greatly influence taste). I like King Arthur mixes. I tried their pizza crust and wasn't nuts about it. But I am picky about crust and I think I'll only be happy with a homemade yeast crust I roll out super thin. Yes, the only "free" is gluten-free and lactose. Sorry. My store charged $5.50 for the 4-pack. I have seen the loaves of Schar bread at another store but didn't check the price or buy them. They are a pricey addiction, but I think I will keep a few bags. -

I believe Ttg is a measure of intestinal damage? It sounds like you've got quite a bit of healing to do - going by your post, not the Ttg. There's another thread here about an elevated Ttg in presence of other normal Celiac tests. -

I found them in the freezer at the health food store, and tossed them in my freezer. The date on them (this store puts a date on their products of when they received them) was this month. The package says to store at room temp until the best by date (April 13, 2012 in this case). After opening store in fridge for 5 days. -

The texture was excellent. I'm not joking. They even felt like a roll when you mashed on the outside. I couldn't believe it. Seriously. I think the brown n serve thing helps...I didn't try one cold (we ate them all). I liked their spaghetti, too. Hubs gave it a big thumbs up, also. -

Yes and yes and yes. You don't know they are gluten-free EXCEPT if they get wet (then they do the gluten texture/crumble/dissolve thing) - just don't take a big bite and a big swig of water. The texture is unbelievable. I'm not kidding. They do this thing where they wrap the dough around, so some of them have a "pocket". They aren't as airy as gluten... -

No, not unless you consider my hubs similarly "diseased" by his ex and son. Which quite frankly , he was. My mother did ask me if I was sure if I could do it...and many times later, as The Nut Job interfered in our lives - she asked many more times. Well, I've had great support from my husband. My son is coming around (he's 9) especially since he's starting to realize this could include him, too. My parents are supportive but refuse testing. Actually that's quite a bit more than "a tad" considering better doctors use 3 as the upper limit and good thyroid docs want it in the 1's. That may be your cause for the high Ttg, especially if his TPO comes back elevated. -

We talked about it last night... We're going to try the strips and earplugs and probably a mouth guard, and take it from there. He's open to more energy and if better sleep (less snoring) does it he's probably in board. A CPAP would be difficult for frequent business travel, no? He should be home in 2 hours! Yay! -

Another thing to consider is adults are generally better at cleaning up, being careful about cc. My son will eat crackers, crumbs all over the place (and in my bed)...and they were GOLDFISH crackers.... Adults would generally act with more care. But kids may sneak the gluteny food or eat without checking (not that adults don't....). -
