We need to plan a trip together!!!! My family is from south LA, my uncle lives in NOLA and I say the same thing...how do I go back??? It's been 4 years for me (Pre-gluten-free). I made a King Cake Friday. Taste was ok but texture was just wrong. I'll try again and change stuff up...I'll eventually get it right. -

Ditto on thyroid disease. And knowing western medicine is not equipped to dx or treat gluten problems...and looking around and finding proof in so many places. Makes me want to grab someone by the throat and say "open your eyes!!!". -

My son isn't dx'ed Celiac but the house is gluten-free so he is too, when he's in it. I've found the King Arthur Flour mix to be a good "general purpose" mix if you want to attempt baking. I don't know what's in them, I suspect salicylate levels off the charts - dyes (natural but super processed), preservatives (again, natural but super processed), I think a form of MSG (one or more glutamates, but not specifically MSG) if I read the label on the sweet chili chips correctly.... You can make your own wipes, even make washable ones. Just use your at-home soap and soak some strong paper towels/napkins in a mild soap/water solution. Put the wipes in a plastic baggy (put all of it in there before adding liquid, easier that way). Take them with you. That will help you figure out if it is the wipes, at least. I think people modify it. Pm Skylark, I think she's milk intolerant and manages somehow. I think you can substitute another protein for eggs. I think sometimes people find they don't react to past problem foods when reintroducing them in GAPS. I know you can make water kefir.

Not necessarily from glutening, but it was something I developed just before gluten-free, and couldn't shake. It went away, oddly enough, when I got glutened (or thought I got glutened). The other weird muscle thing I had was a permanent cramp in my left calf. It went away when I got horribly sick during the hypoglycemia stage. Weird - I get sick...

I have decided I can put up with Rudi's regular if I want a slice of bread. I just toast it but at a lower setting, straight from the freezer. I find gluten-free breads burn easily on the toast setting. For hamburger/hot dog buns I take them out when I start cooking, then I thaw in the micro 20 seconds at a time, wrapped in a damp paper towel. Otherwise... -
Have you tried a healing diet like GAPS? Many others here have tried it including Skylark, DomesticActivist. I feel like its GAPS day for me.... I haven't tried it but it sure helps people identify problems and apparently rebuild their guts. And apparently it tells you what to eat, which is a big help!

Well, I don't have any answers for you other than to say I'm there, too. I think I was glutened about 3-4 weeks ago, and probably got into gluten by cc several times over the holidays (eating out). I don't have obvious gluten symptoms (unless my rash breaks out), but MAY have flu-like symptoms (if that's when I got badly glutened).... I was achey... -

Have you considered a diet like GAPS? I haven't tried it but many here have, especially if they are experiencing unexplained chronic issues, and are in pain. It appears to let you heal your leaky gut (which many Celiacs suffer from) and slowly introduce foods so you can gauge if you have other intolerances. I tell ya what, if I start going down the... -

Well, have you tried eliminating other common allergens - milk, soy, corn, eggs, etc.? A problem with one of those wouldn't raise Ttg (at least I don't think so - someone else chime in) but could make you quite ill. -

Mac & cheese is easy - just use rice pasta instead of wheat. And cook the pasta a bit less before adding it to your mix -rice pasta can get mushy easily. But I don't reco bean or corn pastas in casseroles. Buy a gluten-free pizza crust mix and make a pizza at home. Much less expensive, and no cc risk. A cast iron skillet or one of the holey pizza pans... -

Three Musketeers don't contain gluten ingredients, but I can't tolerate them frequently. Don't know why, just assume cc. same thing happens if I eat out more than 1-2x a week...I can tell I got into "something" (and gluten is the only food I eliminate). Getting glutened can be a cumulative thing - which is why they advise Celiacs not to eat large volumes... -

When you say gluten-free I assume you mean certified gluten-free? Well, if so you are cross-reactive to oats which I believe is called avenin intolerance/allergy. Be careful of gluten-free products that contain gluten-free oats. There are others here with the same problem. -

I'm glad it worked for you. Yes, its the little things. I just ate a BOX of Schar Cocoa Wafers because I COULD. Dangit, I was hungry, they were there (store), and they were almost good. So I ate them!!! Ok, for a gluten-free wafer they were great. Much better than those Glutino things. Ugh! I ate ONE of those, threw the rest out. -
It isn't a matter of what anyone thinks, it may be about how/who the doctor is licensed or able to see. It does suck that you have to go so far, and there are always fewer pediatric specialists. Keep looking and good luck.

If you can find Chebe mixes near you they are inexpensive and easy - bread, pizza crust, etc. I can generally split a pizza crust mix in half (don't mix it up). You could do the same with other mixes. I find I buy very little gluten-free stuff. On top of expensive it usually tastes weird. Beer is an exception, btw! I buy rice crackers, pasta, flour...
