Tonight I finished off my quinoa salad with a burger on an arepa. Since Velveeta is one of the few cheeses I can eat now that's what I topped my burger with. -

I was making fajitas a couple weeks ago and stopped by the health food store for tortillas. I saw the Rudi's there and was pretty excited but noticed the Food for Life ones cost half as much so got those instead. Huge mistake, those things are nasty. I'll definitely be getting the Rudi's next time I want tortillas. -

I sounded like an ungrateful wretch didn't I? Sorry about that, I am really appreciate of the ideas and suggestions and I'll find a way that flax works for me. Or one of the other ideas if flax just doesn't cut the mustard. It was just the shock of it in water, the texture. I was diagnosed with pseudotumor cerebri and/or intracranial hypertension, the doctor used the terms interchangeably. Basically, I have all the signs and symptoms of a tumor, only without a tumor. Last time I had pork I just fried it up with a little salt and pepper, but I <3 pigs. I fried a sliced apple until lightly golden and turned it into an apple in caramel sauce. Hasselback potatoes are awesome. They are super easy but look fancy and always impress. You might earn yourself a footrub even if he doesn't like the piggie.

I found out Friday that my life is now baconless (and hamless and chocolateless) and considering all the new things I've had to give up I was honestly debating if saving my sight was worth giving up bacon. I personally did not refrain from eating out. I did refrain from eating anywhere I wasn't 100% comfortable with. Since my local Wendy's has an adult staff I was comfortable there and they have a great variety to choose from. (Even adding more restrictions over the weekend I'll still be able to stop in occasionally, yay!) Other than that in the first 2-3 months...

I'm not sure exactly where you are in Utah, and I wouldn't recommend my doctor. (I love him but he's not exactly celiac savvy.) If you're up to a jaunt to Sandy though I highly recommend a stop at Eleanor's Bake Shop which is 100% gluten free. I'm A: lazy and B: don't have an appliance for grinding flax. I <3 my blender/food processor but it is not friendly for grinding. If I buy meal can I just throw it in the freezer to keep it from being funky or is that not effective? -

Thanks for all the hugs and support, I really needed it. I'm done feeling sorry for myself. I'll find out in the next two days if this is permanent (everything I read suggests it is) or if I can switch to a "eat with caution" sort of diet once my vision is restored.

No leafy greens (like spinach and collard but lettuce is okay), no beets, no peas, as far as I can tell the recommendations on dried fruits are mixed so I should probably just avoid them. I'm done feeling sorry for myself with my new diet restrictions. Now I need to actually make the changes but I'm having one issue. Where in the heck will I get fiber from? Thanks. I appreciate the suggestion of white chocolate but frankly I won't touch the stuff. There isn't any chocolate in it and it is nothing more than an edible lie. (Also it tastes nasty.) So I have an answer for my blurred vision. Apparently I have pseudotumor cerebri. Basically, the I have too much spinal fluid which is creating too much pressure in my head and pressing on my eyes. It's also probably causing the migraines I got this week and the frequent headaches and some other problems. I go back next week to see if tests point to lupus...
