  1. Soy sauce is often used for the saltiness. It does taste fishy, but not too much. I use Thai Kitchen becasue they clearly label their products. It's gluten/dairy/soy free.
  2. I layer this in a bowl. Peanut Butter Panda Puffs Tofu pudding homemade Jell-o (unless I am lazy and then I make the boxed stuff) Cornflakes Tofu pudding homemade Jell-o Quinoa puffs and then all over again. I eat this every night before bed in a huge, huge Japanese stirfry bowl.
  3. Fish sauce. It's interchangable in most recipes.

  7. peel ginger and store it in the freezer. it will stay nearly forever, and you can grate it frozen.

  9. another great thing, especially if you are lactose or casein intolerant, are the So Good 'milk boxes' (like juice boxes). Because they do not have to be refridged, it's nice to have those on hand if you want coffee / tea / cereal, et cetera.

I made amaranth pancakes this morning and my mom mentioned that they taste the most like rice flour (I am allergic to that, but I asked her what she thought of the pancakes).
