    Jack Daniels is "proven" Gluten free!!! Nothing like a Jack and Diet Coke, with a plate full of good 'Ol fried food!

    You must learn a new way to drink, (and eat my friend). Sorry for my sloppy typing!. Im eating a fresh killed deer as I type!!!! I suggest getting a gun and learning to kill your own food. Wild game is everywhere and very tasty! Not only is it nutritus, its fun to kill, and eat as well!!!!

    Deer can be ground into burger, and you cant tell it from beef.

    Also you can make squirrel stew, fried squirrel, fried rabbit, (if you dont know, use Bobs Red Mill All Purpose Flour.

    What else can you eat?

    Quail

    Muskrat (wonderfull!)

    Wild Hogs

    Dove

    And depending on where you live< Moose, Elk, Antelope, Beaver, Bobcat, Badger, Duck, Goose, Coot, Jack Rabbit, Porcupine, Groundhog.

    If it moves, it will feed you. And it is Gluten free!

    Ahhhhhhhh!!!! Life is good my friend.

  3. I'm 11 months GFSF and was CF until just recently, now tolerating small amounts of milk. Fat malabsorption was severe a year ago, now normal (via Enterolab).

    However, lots of vitamin, minerals and amino acids are very very low. Has anyone else had this issue and has it eventually resolved (like after 2 years of healing)?

    If yours has resolved, what helped?

    In the initial phase of healing, vitamins and minerals may not be absorbing. Yes, I would round my healing off to two years. Diagnosed in August of 2005, I now consider myself in total remission.

    It took me six months to master the diet. There is just too much to learn and too many traps. Any newly diagnosed that claims to be totally gluten free in the first few weeks, just is not aware of the scope of the gluten free challenge. The learning curve it steep.

    You are showing improvement. Be patient and diligent.

  4. I read in a gluten-free book that Rice Krispies and Corn Flakes are ok for Celiacs. But the ingredient list says Malt Flavoring, which is listed under the "foods to avoid list." Anyone know?

    Also, I might be getting anal and a little overboard, but are canned vegetables that list spice ok? i bought crushed tomatoes to make pasta sauce and it has spices listed. It's tomatoes with garlic, and basil I think. Thanks

    :o Throw that book OUT! Yes, you are correct Rice Krispies and Corn Flakes are not gluten free.

    Here is a link that will be very helpful. It lists companies who will clearly list all forms of gluten (as in wheat, barley, malt and rye) so there is no worry about ingredients like Natural Flavors and Species.

I don't think we are allowed to use the name of the online retailer that shares its name with a river in South America but they have significant discounts on gluten-free bread mixes if you buy in bulk (usually a box of six packages). I've not tried but if you subscribe (get the same order at a 1 to 6 month interval) they discount even more.

    I order enough from them that it was worth it to pay the annual $70 to get everything at two-day shipping for no additional cost.

  6. I learned that lesson again today. Got itchiness all over and crashed hard for two hours.

    Oops, I meant Gliadin, not "Gliactin". I'm still new at this.

    Even though the intolerance test I took (by Lame Advertisement) was negative, my sister --a Celiac with a biochem degree-- told me that 99% of those who get itchiness all over their body after eating gluten will test positive on the test that takes a biopsy (would that be Enterolab?).

    The same food intolerance test also told me I have a mild reaction to apple, which sucks when you go out with your beer drinking friends and all you can get is hard cider.

    I've been communicating in broken English with my nextdoor Asian restaurant about soy sauce and they offer an alternative to Kikkoman. I wasn't so lucky with my favorite Sushi restaurant. I had their entire kitchen trying to find a non-Kikkoman solution for me, but with little luck.

    I don't know where you are located, so this may be relevant or not. www.triumph.dining.com has ethnic dining laminated cards in many languages. It explains the gluten free diet and what to avoid when eating foreign food. I have used mine frequently at Chinese and Mexican Restaurants. They also can be found on this site.
