  1. The kids and I eat quinoa flakes.....it's packed full of nutrients. But to get the kids to eat it, I have to sweeten it up. I cook it in pear juice instead of water, then add cf butter, brown sugar and cinnamon.
  2. Thanks for the recipe. I LOVE oatmeal cookies, and have missed them so much. So this recipe doesn't use any flour? That would be awesome for us....my kids devour any cookies I make, so it can get pricey going through my gluten-free flour mix so fast. We can't tolerate oats, but I think Quinoa flakes would sub pretty well. Can't wait to try!
  3. Another stuffing mishap here!!!!! I completely forgot to cover it while baking, and it was dry as a bone. Everyone was laughing as they were trying to spoon my stuffing crumbs onto their plate. My cornbread had really crumbled up after I dried it out, so I didn't have high hopes for it in the beginning anyhow. The flavoring was right though, had it held...
  4. We have given up on eating out for now....we've had too many mishaps. My dd is really sensitive, and has been sick from both Chipotle and Pei Wei. We've had the same difficulty getting the staff to change gloves, but after looking closely at everything, there's cc all over the place. When my dd got sick from it last time, we gave up. We've also had problems...
  5. Funny you brought this up....my husband was watching that show "How it's Made" on the Discovery channel, and one of the shows was about how sanitary napkins are made. It mentioned that the absorbant material is often derived from wheat. I never would have thought that pads could be a potential problem! It is definately something to think about though for...
  6. Is it possible that you may have Celiac disease? I ask b/c I tried to nurse my children (I have four), and they all had problems gaining weight. I had to supplement with formula to get them to gain...and since that was so much more work, I didn't nurse for long. The only child I was able to successfully nurse was my fourth child....and I was on a gluten...
  7. It can be pricey....I think everyone spends an arm and a leg in the beginning, I know I sure did. I remember spending close to $100 at Whole Foods, for one bag of groceries! I have a family of six to feed gluten and casein free, and I am now doing it for around $150 a week. I think the key to not spending a fortune on this diet is to not try and replicate...
  8. Self diagnosed here too......my daughter was diagnosed first, and her doctor told me no one else in the family needed to be tested unless they had symptoms (that was before I learned so much from this board!). So I never was tested, I just ended up going gluten free with my daughter, not really intentionally, it just happened that way since we never...
  9. I don't let my little girl eat them.....only b/c we've tried a few times, and she seemed to react. But there's no way for me to know for sure if it was the particular item she was reacting too, or something else. She's 5, but she's still working on her language skills and doesn't usually tell me when she doesn't feel well. She just gets very irritable...
  10. I know it's a shock at first, and it is a huge lifestyle change....but it gets much easier with time. Does she like Kraft ranch dressing? Kraft ranch is gluten free. And we use Aunt Jemima regular syrup, but most of the time use 100% maple syrup (are you maybe thinking of molasses instead of maple syrup? B/c 100% maple syrup is actually very mild and super...
  11. Welcome to the board! This is a great site, loads of friendly people with good information. As far as your questions...I can help with a few! We have a large family, and at first I tried having regular snacks around for the other kids. But then I had to watch my Celiac like a hawk (who was 3 at the time), and stress about crumbs and gluten fingers everywhere...
  12. If your daughter's biopsy showed villi blunting.....she needs to be gluten free, period. That is your diagnosis, regardless of a negative blood test. And her reactions do not seem strange at all, they actual seem pretty typical for Celiac to me. With my daughter's gluten accidents.....it's always worse if she hasn't had an accident in months. But one...
  13. I also wanted to recommend Oriental Trading company...they have an online catalog, and sometimes free shipping. I absolutely love their catalog, they are super cheap and you can get a ton of little gadgets and crafts for the whole class. I plan on ordering stuff from them for my dd's class party this year, stocking stuffers for Christmas, and Halloween...
  14. I'm not sure where to post this, so I'll post it here, lol. I am struggling with a situation, and I'm curious how you all would handle it. I work in a children's hospital, and in the past have come across patients of mine who I think would really benefit from at least being tested for Celiac. I had one today that really troubled me, b/c this young girl...
  15. I'm glad you posted this, I've been going through something similar. It's nice to see that others are going through the same thing. The past two years have been long and rocky for our family, first my little girl was dx'd.....we had two more babies, then we've been dealing with developmental delay and speech issues since then. All the while, trying to...
  16. Has he had a full developmental evaluation? Is he already in therapy now? If not, I would really get the ball rolling to get him evaluated. I had to switch pediatricians to get one who took my concerns about my dd's delays seriously. We took her to a developmental pediatrician, the wait was 6 months long. But that is where we got the prescriptions for...
  17. I also wanted to recommend the books mentioned for you......I especially LOVED the Karyn Seroussi's book, it is really easy to read, but full of info too. My daughter has a developmental delay, but since I removed casein (she had already been gluten free for 2+ years), the gap has finally starting closing. She was 15 months behind in language. First...
  18. oops, double post!
  19. Gotta jump in on the anti-dairy discussion here. I just brought my 15 month in for her check up. She has never had dairy in any form, and will not ever. The doctor was shocked at how WELL she's been.....She has only been in for well child checks, and has never had a cold, ear infection, etc. Then he starts to grill me about why I don't give her dairy, he...
  20. I found these at my local grocery store, and they *look* gluten free....all natural ingredients, no MSG, etc. I am waiting on an e-mail reply from the company, but I was just wondering if anyone on here knew already if they are gluten-free or not? I'm hoping they are, b/c I LOVE cooking with bouillon cubes rather than straight broth, although the Kitchen...
  21. I promise, it gets better over time. Those situations are tough, but after a while the kids really get used to it. My little boy's soccer team always gives out cookies or some sort of gluten filled treat, at the end of each game. Jack doesn't even think twice about it now, he just grabs the drink and goes on his way like it's no big deal, LOL. I also...
  22. Just my advice, but I would cut out all dairy, as well as the soy yogurt. My little girl has been on the diet for two years, but soy still gives her tummy issues very similar to gluten. My husband bought silk soy milk a couple of weeks ago, and I could have sworn the child had been glutened. I'm gluten free as well, and just drinking a glass of soy milk...
  23. Oooh, thanks! I'm glad to know that the flour works well. I've really been trying to incorporate more cocunut into our diet. I have coconut oil that I use to cook with (plus I take it straight as a supplement) and I use coconut milk in smoothies and such. I'll have to give that book a try...thanks for posting this.
  24. I couldn't agree more!!!!! My daughter was the first to be diagnosed, but had I known more back then, I never would have waited so long. She was so very, very sick by the time we figured out (on our own like most parents) what she may have, and finally got a positive diagnosis. I had my two boys tested as well, both were negative. But after doing some...
  25. Welcome to the board! I think many of us share a similar story....my little girl was wasting away as well, she was 3 years old and weighed less than 20lbs before she was diagnosed. And even though we live in a big city, with two children's hospitals, it still took four doctors and an entire year to get an answer. Our GI doctor did nearly the same thing...
