    My kids, and myself, can't handle too much fiber from grains. I have a fab bread recipe that I got online, made from brown rice flour, sorghum, and ground flax seed. It tastes great, but also has a ton of fiber, and gives us all stomach aches and cramps if we eat too much. I think this is the same reason we can't tolerate gluten free oats...too much fiber...

    Poor thing, I think childhood is much too short to spend it feeling sick all the time! I understand about not having insurance, it's crazy how much simple tests and doctors visits cost. If you don't want to go forward with testing, there are some great books by Dana Korn to get you started. Those helped me in the beginning. If he starts to feel better...

    I would love to know thier manufacturing process too.....as for us, we aren't buying any more. My dd was acting glutened for weeks, and I could not figure it out.     That's a tough one. I have some thoughts.....like the other poster said, coffee may be killing your stomach. I reluctantly gave it up four weeks ago b/c I couldn't figure out why my stomach was so sensitive. I gave up coffee, and feel a TON better. The first few days were rough, but I drank some Coke to tide me over until I could cut caffeine out completely...

    I have a swollen lymph node on my left side, I've had it for years. I first noticed it in my teens, when it was at its largest.     My dd reacts to the Honey Nut and Corn Chex....I don't think it's gluten though, but rather the whole grains b/c she's fine with the Rice Chex. I also seem to have a problem with most whole grains, we've really had to cut back on the baked goods ( I use brown rice flour) and whole grains in general.     Yes! You just described my son and daughter perfectly if gluten sneaks in somewhere. Right down to the major meltdown at Walmart, lol!!!!!     Ack! I'm in Mckinney! We are casein free, but the kids tolerate a little cheese here and there as long as it's not a daily thing. They have never had gluten free pizza out, what a treat this will be! Thanks, I had no idea there was gluten-free pizza right in my neighborhood!

    A while back, we looked into private health insurance. My husband was thinking of taking a sales position with a small company that didn't provide benefits yet.     Agreed, if it makes a 2 layer cake, it's not a bad price. If it's just enough mix for one layer, not so much. I'm curious to see how it tastes though.....so I'll buy it at least once just to try it out. No signs of it here in Texas yet, but we also just got the Honey Nut Chex, so I'm guessing it will be a while.

    It can get discouraging in the beginning when you try a few of the bad gluten free packaged items, and believe me, there are alot out there!     Our favorite, before we cut out dairy, is the Gluten Free Pantry sandwich bread and Anna's Breads. Both excellent breads, and super easy. I bake my bread from scratch now, but mainly b/c we are all gluten free, so it saves money. I'm still not a huge fan of bread baking from scratch, lol. If it were just me, I'd go for a mix....for one person, a loaf...
