  1. Not much time to write, but I think the teacher is flat our wrong on this one. Baking would be an absolute no in my book....gluten free is much too difficult for anyone not on the diet to understand.   2. Yep, this worries me too. I personally think things are going to get worse before they get better for Celiacs....we are seeing more and more mainstream products come out with products that say "gluten free", which have up to (or more I believe) 20ppm of gluten. That leaves us going in circles trying to figure out what is making us sick, b/c we don't think...

  4. Well, it turns out that I may have actually married another Celiac, but didn't know it until recently So, that may explain why all of my children have to be gluten free. So don't let my siggy scare you from having kids! Another thing though....I used to work in a children's hospital, so I think that helped put a positive spin on the entire Celiac...

I have a 10 year old son that I put on the diet without a positive biopsy.....I had him blood tested b/c his sister is biopsy diagnosed, and he already had psoriasis and tummy issues, but he tested negative.   9. You aren't alone....I've tried Bob's Red Mill cornbread twice, and both times I thought it was way too dense for my taste. It's good for stuffing though after it's dried out a bit.   12. I'd really like to start making my own almond milk and cashew milk. Pretty much all the nuts I can find are "packaged in a facility with wheat" yada, yada, yada.   13. I don't think baking them would give you the same crunch and texture as deep frying. I've never tried it though, so maybe someone else has had success! I don't have a deep fryer either, I just use a deep sauce pan and pour almost an entire bottle of veggie or canola oil in. It has to get really hot, I don't have a thermometer so I just test it by dropping...

  15. It could definately be a possibility. My last baby had problems from the beginning, mainly reflux. She is what prompted me to finally go gluten/dairy free myself, since I was breastfeeding. Some babies do have problems that early on from Celiac. I would for sure get your oldest dd tested. We have four kids, and they all have problems with gluten...
  16. That's a tough one. If it were me, I would really press the pediatrician for a note for the after school program. Or make the effort to see the GI doc, and stress the response to the diet and how sick she got from one cookie. Hopefully with the family history of Celiac and dietary response, that may be enough. Maybe asking for a "gluten intolerance" note...
  17. I would get the Kitchen Aid. I use mine all the time....I think it's the one appliance that makes baking so much easier. Baking bread in the oven isn't too bad, I have my prep time down to 15 minutes.

  20. Sounds great.....do you happen to know what brand(s) the gluten free food is??? I would love to do this since we are on a really tight budget, but my dd is also very sensitive. Knowing the brand or company that produces the food might help me feel more secure in ordering. Thanks!!!
  21. Oh I would be fuming!!!! That must make it more difficult that you actually work in that school. I hope you get something worked out, that is really awful. I swear I sprout 100 new gray hairs each new school year, it is so stressful having to start over with someone new, and just praying that they undestand!
  22. None of my kids can tolerate dairy. With my last child, I had to cut out dairy to ease her reflux. She still gets reflux symptoms if she has some dairy, and she's three.   24. I noticed it with the soy sauce...I got really sick from it, but the bottle said gluten free. A week later, new label with wheat in the ingredients. I haven't really bought any more Great Value food items since then. That is interesting though....I wonder why the change??
  25. Wellshire farms nuggets and corn dogs got us too. I *thought* it might have been those that were making my dd sick, but I kept second guessing myself b/c the package said gluten free. Our diet is hard enough w/out companies knowingly putting out gluten free product that are contaminated. And the fact that their product is marketed for children makes it...
