ARCHIVED Low Blood Sugar Levels, Anyone Else Dealing With This
Nancym replied to dally099's topic in Related Issues & Disorders
You might want to consult a glycemic index. Here's one: Open Original Shared Link White Rice: there's one that is 112 GI, most are over 58 Sugar: GI Index of 58 (makes sense, 50% of it doesn't cause a glucose rise since it is fructose) Cocoa puffs is close to 100. I saw a rice flour bread in there that was shockingly high. -

ARCHIVED Low Blood Sugar Levels, Anyone Else Dealing With This
Nancym replied to dally099's topic in Related Issues & Disorders
RH tends to be associated with pre-diabetes. Fasting hypoglycemia tends to be due to problems with the glucagon release or really nasty diseases that are pretty rare. Google "fasting hypoglycemia" if you want to scare yourself. If you've got the sort where your blood sugars aren't actually low (which is defined as < 60), but you get the shakes, faintness... -

185 is VERY high for 2 hours after a meal. You're probably in pre-diabetic range at least. Here's an interesting discussion of what normal glucose numbers should be: Open Original Shared Link People think of eating too much sugar when they're thinking about blood glucose but in reality starches can be just as bad if not worse. On the glycemic scale... -
ARCHIVED Where To Get Coconut Flour?
Nancym replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
I understood that to be the case but the fruit (which the flour is made from) contains coconut oil which is a very stable oil. So it doesn't seem like something which could easily go rancid. -
ARCHIVED Where To Get Coconut Flour?
Nancym replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
Coconut flour is usually defatted coconut flour. I've had some for a long time and it doesn't smell rancid. Vydor, I get it from netrition.com or simplycoconut.com. I think I paid around 8 bucks for 2 pounds. But it lasts a long, long time. Also, in my experience, coconut oil is very stable. They used to use it in baked goods all the time because... -
ARCHIVED Am I Crazy, Or Are Women More Frequently Gluten Intolerant?
Nancym replied to jonney's topic in Coping with Celiac Disease
I think men deny it a lot more than women. To a lot of them an illness like this represents weakness. Even though they'd never admit it, men need to fit in more than women do. Not being able to "have a beer with the guys" or having to fuss over ordering food in a restaurant is pretty unmanly. And I think they're more concerned with their gender identity... -
ARCHIVED Has Anyone Eaten Meat After Being Veg?
Nancym replied to jesscarmel's topic in Introduce Yourself / Share Stuff
What's so funny is how I remember eating vegetarian things that were meant to taste like meat. You'd think it'd be just a quick hop back to real meat... -

I use coconut flour nowadays. it is low carb, tons of fiber. I make a delicious muffin and microwave it in the bowl I mix it in. It is great stuff! You're definitely doing bad things to yourself with all the starches and sugars you're eating. I've read that the hypoglycemic symptoms that people get with reactive hypoglycemia is because of the quick... -
ARCHIVED New Here And So Glad I Found This Place!
Nancym replied to Boffin's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'd say go ahead and have the biopsy but even if it comes out negative try the diet. So many people find the diet clears up a lot of problems. -
ARCHIVED Daily Eating Habits

I don't use bread replacements as I try to avoid all grains, beans and stuff like that. My health and weight are a lot easier to control without all that. -
ARCHIVED My 0301 Gene Friends
Nancym replied to confused's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Only something like 50% of the human genome has been figured out (as to what they do). There are some new recent advances though that should be turning up some very interesting things. What's going to be even more interesting is proteinomics, that is discovering the proteins that these genes code for. -
ARCHIVED Twitching Leg Muscles

It sounds like RLS. You might try supplementing B12 and see if it helps. I had a lot of weird twitches, vibrations, pin-prick sensations for about 1 year after going gluten free. I started to take a lot of B12 and they've gone away. -
ARCHIVED Kitchen Aide Stand Mixer
Nancym replied to mairin's topic in Gluten-Free Recipes & Cooking Tips
I bought one probably 15-20 years ago. It wasn't the highest power by any means and it has done fine with whatever I've thrown at it. Still works good! The attachments are another matter... they're made from plastic and all ended up cracking even though I didn't use them much. I did buy new ones and hopefully they've corrected whatever it was that... -

ARCHIVED Can You Have Positive Tests And Not Be Celiac?
Nancym replied to Gentleheart's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have found there are a lot of foods that give me the "D". Many sorts of seeds, maybe peanuts, gluten and casein for sure. Sometimes its just a matter of trial and error to find what it is. I think a key towards eliminating leaky gut is finding out what is causing the intestinal irritation and getting rid of that. Sometimes it is more than just one food... -
There are so many symptoms that often times it gets overlooked because it doesn't match the classic ones: weight loss, diarrhea, intestinal ones. For me I had IBS (running to the potty many times a day, cramping), brain fog, fatigue, and terrible gas. It was amazing to me how cutting out dairy and wheat reduced my gas to almost nothing.

I just made a custard from coconut milk (or cream) and eggs with some sweetener. It was very good! I also make a lemon curd (like a custard) with lemons, eggs, sweetener. With raspberries on top it is sinful. Sometimes for breakfast I eat olives and nuts. Other I make a coffee cake out of coconut flour and rice bran (and other delicious things...

You can be a celiac without the 2 genes they know about. It's rare, but it does happen. So you have my permission to call yourself a celiac. I do it too, even though I wasn't diagnosed by biopsy.

ARCHIVED My Doctor Doesn't Believe Me
Nancym replied to Ellie2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Somehow the human race managed to do just fine without wheat until a few thousand years ago. -
I am so skeptical of dieticians. They seem like such a badly informed group of people most of the time. I bet you could get better info from support groups like us and local ones.

Nancym replied to DesertRatCeliac's topic in Coping with Celiac Disease
Well, I'm not so sure that they don't go hand in hand (nutrition and healing). I'd suspect you're eating things that'd still bugging you. Microwave ovens should be pretty easy to work around. You can always place a plate on top of whatever you're microwaving to make sure something doesn't fall in. I've always heard that pharmacists have a lot... -

Nancym replied to LoveBeingATwin's topic in Introduce Yourself / Share Stuff
Well, I give you all a lot of credit. Frankly I can't stand self-centered people and I just avoid them. -
Hey! Glad to hear you're figuring this out. I just bought a glucose meter too. I had some really low readings like 58. But they might have been mistakes, although I might have fasting hypoglycemia. You probably had reactive hypoglycemia, I'm guessing. Anyway, I don't think mine is too severe, I just get very, very sleepy without the shakes. I find...
